Princess donuts are a French delicacy that over time began to be made all over the world, where it is known as profiteroles.
I pour 250 ml of water into the pan, add 125 g of margarine, one spoon of sugar and a pinch of salt. When it all boils and the margarine is completely melted, I add the flour and stir on the stove until the last lump disappears. I cool the dough in the freezer. I will separate some milk from the total that I have prepared for the filling, add two egg yolks, previously separated from the whites, and 5 level spoons of thick cream. I beat everything together with a mixer until it is well combined. I am now pouring milk into the pot. There is somewhere around 400 ml. A little while ago, I separated about 100ml, in total I will use half a liter of milk for the filling. I add 200 grams of sugar to the milk, and when it starts to boil, I add the previously whipped milk with egg yolks and thickener. The filling is cooked at medium heat on the stove until it thickens like a pudding. I will cover it with foil and put it to cool.
While the filling is cooling for further preparation, I will beat 4 eggs. The filling I'm currently making is the original pastry princess donut filling. The preparation is very simple, so never avoid it and replace the pudding with filling. The filling with egg yolks is much tastier in my opinion.
I must add the beaten eggs to the well-chilled dough. In old recipes, housewives add one egg at a time and knead the dough by hand. Believe me, this is a much easier variant for the same result. When everything is nicely combined, I put the donuts on the tray with a syringe. This measure will make 12 nice airy doughnuts. They are baked at 200 degrees for about half an hour. In order for your donuts to grow and stay that way, do not open the oven while they are baking.
When the filling has cooled down, I add it to the previously whipped margarine. I whipped 125 g of margarine.
For the second layer of filling, I will whip 300 ml of sweet cream.
