In chile (i have no idea if it's common in other countries as well) we make lemon pie which is filled with condensed milk and lemon juice and topped with creamy meringue :) it is so yummy!

For anyone following the recipe from the website, the filling can fill 3-4 pies. Halve of what they say will be plenty regarding the filling.

Instead of vanilla sugar, I would put seeds from a vanilla pod to give it a stronger vanilla flavour and the seeds gives the tart a nice look to it :)

It was not so yellow at the beginning, but as it set, it got to the normal full yellow color. I was worried, so I’m writing for others to know :-)
Next day update: It’s almost impossible to take out of mold after a night in the fridge. When it was just baked it was very easy
this is practically the same as my lemon tart recipe, except i use extra lemon zest (not orange) in the crust. delicious!

Btw, in my experience, it's easier to zest firm lemons, so the softening them up by rolling should be done post-grating.
