People swing by and pick what they need, no reason to come to the door. Thing about living out in the country is most of your neighbors ALSO have chickens! XD

Another great thing to do when you have a lot of eggs is Eggs muffins so easy and using a lot of eggs I normally beat up 10 eggs, little Milk, chop up whatever veggies I have throw in cheese mix it all put Throw in muffin tin bakes normally 6 muffins

Something you can do to stretch your seed starting space is winter sow your cold hardy crops. Luke at MIgardener has videos showing how to use milk/water jugs to start these seeds. I’ve done it, and it works great! You can also use clear plastic storage bins. The method is basically miniature cold frames. If you happen to find inexpensive old windows, you can use them to build permanent cold frames. Hopefully the weather will warm up soon! Someone I know who lives in Jacksonville, NC was complaining about the cold there! If it’s cold in Jacksonville, western North Carolina must be frigid! At least you’re not in Michigan! Temps here have been below zero Fahrenheit! Plus, we have six inches of snow on the ground!
Don’t forget the $1 bread aisle in J’s the next time you don’t want to make bagels. We make our own bread, but it’s just easier to buy the bagels at J’s. :)
Put the lime in first, then your eggs and then carefully add the water last. The water will clear up - don't worry - you have to watch carefully for cracked eggs when putting them into jars - store the eggs in the jars in a cool dark place and leave undisturbed - they can store 18-24 months -

Wow, you folks ended up with a bunch of meals from those eggs and the other ingredients used. I bet that the taste of these end results was absolutely incredible and so much more healthier than some store bought comercial meals that you really don't know all that is in them. You guys make a wonderful team working together and I applaud you both.

@@calicocowacres even my eggs that need to be washed I store on my counter or a shelf out of the way and just wash before I cook with them. That way I don't have to put them in the frig. They might not look pretty, but they keep well! By the way, I'm in Western NC, on the Buncombe Co / Madison Co line in the Leicester area.
I’ve kept chickens for a real long time and experimented with eggs and the feed I fed the chickens ,,,what I learned was that the more wheat I fed the chickens , the better there eggs tasted and the lighter colored the yolks were ,,in fact I found that at least a fifty percent diet of wheat was what it took to get great tasting eggs
Awesome job with the pasta and bread! Ravioli (cheese) is my favorite! When I was a kid my grandmother and aunts would make them for Sunday dinner at grandma’s and grandpa’s house!
I love me some cheese ravioli, too :) I think I've only ever had storebought frozen ones before we made them ourselves, though. I will for sure make lots more!
You can just take the eggs out of their shells and deep freeze them. Place them in a muffin tray freeze them then you can bag them for future baking needs. We have like 500 eggs frozen like that. When chickens take of laying that much you will have lots available. Oh you can also blend them up first before putting them in the muffin tray. Good luck 👍

I water glass duck eggs. I only have 4 ducks. My ducks are separate from the chickens. I don't know how many you have. I just started to watch your channel yesterday. The ducks lay there eggs first thing of a morning. When we get up in the morning we let them out and shut there door and open the door to put them up. So the eggs are always clean... I water glass both chicken and ducks every year . I like the duck eggs better than the chicken eggs.. I'm enjoying your channel. I can't wait to watch the rest of your videos.
Great video, as always. Suggestion when cooking with eggs…crack them each into an empty bowl and then add them to the recipe. Adding directly into a recipe risks accidentally putting a rotten egg in and ruining the rest of the ingredients.
For reference, I'm paying about $0.50 to $0.55 per egg (organic) in stores here in Munich, Germany. Seasonally, they're not very large right now. I guess a so-called medium size. Another YT channel I follow, Simple Living Alaska, regularly preserve eggs from their homestead - yes, in Alaska. They seemed to have found a process that works for them. All the Best.

Also, do you have a favorite pasta dough recipe? That's something I've been wanted to experiment with! I water glassed eggs last year and I want to say about 70-80% made it a year (before I used them all). Some cracked along the way, but none went bad. Great for baking and scrambled eggs, but maybe not a fried egg ;)
If you search via youtube "how to wrap a breakfast sandwich" there are lots of videos, that's what i did! lol it's basically magic. I don't have a specific recipe for pasta, usually just mix flour with eggs til its the right consistency! very very easy and it's hard to do it incorrectly, so try it!
Who says we have to sell it? Don’t get me wrong, we will be selling some of our eggs, but we’re not pursuing this lifestyle to sell what we produce. We’ll eventually probably just sell enough to cover the cost of feed. There’s no rule in homesteading that says we have to sell eggs. Do what works best for you.
Someone might have suggested this, but I've salt-cured my duck egg yolks ( @threerivershomestead suggestion) and it makes a great seasoning! Especially with a little seaweed.

My favorite homemade pasta is for beef and noodles. I just mix eggs and flour with a lil bit of water, roll out, cut and add to my boiling broth.

Pickled eggs are a good idea. You can add them to potato salad, make egg salad and deviled eggs.

I also have eggs galore! I pickle eggs for my family. Good way to use them if you like pickled food. Between 4 and 5 dozen will fit in a gallon jar.

Duck eggs are super great for baking cakes & quick breads. They make them more tender & fluffy than using chicken eggs.

Honestly, just the cheapest one I could find on sale for Prime Day back in july. It's decent, and it was like $20.
