How to Cook Pizza on a Shield Like a 600 BC Persian Soldier | Ancient Recipes with Sohla

Pizza has been around for so long it’s impossible to pinpoint the exact origins. In this episode, Sohla El-Waylly tries to recreate one of the coolest ancient versions of pizza just how 6th century BCE Persian soldiers would have made it: on their shields! #AncientRecipes
Recipe for Nan-e Barbari:
For the dough:
1 1/5 cups lukewarm water
1/2 cup beer yeast
2 cups whole wheat flour
2 teaspoons of salt
For the glaze:
2 teaspoons of whole wheat flour
1/2 teaspoon of olive oil
1/3 cup of water
For the toppings:
1/2 cup of halloumi
1/2 cup of dates
Directions:
1. Mix all of the dough ingredients together until well combined into a sticky dough.
2. Knead the dough until it is a smooth, fairly soft dough.
3. Put the dough on a lightly oiled shield. Cover the shield with a towel & let the dough proof for 1 hour.
4. Transfer the dough to a lightly floured surface. Gently deflate the dough & divide it into two pieces. Shape the pieces into a rough log about 9” long. Tent with a damp cloth and proof for another 30 minutes.
5. Preheat the oven to 450 F.
6. Combine the glaze ingredients in a small saucepan and bring to a boil.
7. Once boiling, continue cooking over medium heat stirring constantly until the glaze thickens & coats the spoon - around a minute.
8. Remove the glaze from the heat and set aside to cool enough to handle.
9. Place the shield in the oven to preheat it.
10. Deflate the dough. Use your fingers to press 5 lengthwise grooves into the dough without cutting through the dough.
11. Spread the glaze on each dough, rubbing it all over.
12. Put the dough on the preheated shield. Bake for about 7-8 minutes.
13. Flip the dough, add the dates & halloumi. Bake for another 7-8 minutes.

@Brandon Adams Ancient Aliens tends to favor fantastical theories and more often than naught disrespects the intelligence of not only its viewerbase, but many of the non-European cultures it talks about. I'm far from a tightass, but it has gotten old.

This show is cool, but what I really want is a food historian alongside Sohla to kind of add the historical colour to the recipe. Some back and forth that kind of showcases Sohla'a knowledge alongside the interesting historical facts would be amazing, and would make this show more than just a cooking show with weird old techniques.

@@EidolonSpecus yes! because i bet i'd learn something fundamental about cake baking that i've not learned in 40 years of watching cooking shows and reading cookbooks like novels (and cooking haha). i literally learn so much from every sohla video i watch. and i grew up watching julia child, jacques pepin, yan can cook, all the old greats... sohla is easily at their level. maybe even beyond.

Hannah Hart's Edible History videos before Tasting History have many more views than his! But neither invented historical recipe shows.

Man, the History Channel and cooking channels were my favorite channels to watch on TV as a kid like 15/20 years ago. This show is perfect for me. Plus it's Sohla and she always fills my heart with joy. ♥

@@Estherlovestheworld Bon Appétit fell apart due to racism, both in BA itself and in its parent company Condé Nast. They stopped making videos for a while, and then returned with almost all new faces, including a lot of racial diversity. It would be nice to think that they've learned and improved.
Sohla el-Waylly was the one who pulled the trigger. I'm glad to see it didn't hurt her own career too much. Whistleblowers often suffer, but not this time. Still, it must have taken courage.
@@Estherlovestheworld to be specific, thanks to sohla's whistleblowing we learned that BA was paying SOME of their staff but not all, specifically for being on video (along with for their editorial work) - and it just so happened that all the staff NOT getting paid to be on video, and only getting paid for their editorial work, were people of color. so you'd think once she'd revealed this and there was a huge uproar (because she was clearly THE most talented person on the test kitchen staff, not that it even should matter, if one person gets paid specifically for being on video then everyone who appears on video should) - you'd think that BA would realize, hey, we should right this wrong, but basically... no. and as a result BA imploded - almost all their on-air talent - all POC, and almost all the white folks - ditched them. they have a bunch of new staff (and very diverse, though that could be tokenism of course) but i'm pretty sure their viewership has bombed because of it all. oh and also the EIC left or was fired in all of this because as the saying goes, the fish rots from the head.
