The McRib is made from residual pork that is bought from abattoirs, which experiences intermittent dips in market price. McDdonald’s brings back the McRib whenever that happens so that they can save money by paying for cheap shitty leftover meat instead of paying for actual good quality meat
Plus the McRib is seen as something special, something that you MUST buy now before it goes away
