the first one is basically a kit to make your own popping boba - its the exact same process! its made from sodium alginate, which naturally occurs in a type of seaweed, that when mixed with water and flavourings and suspended in either calcium chloride or calcium glucate lactate it forms these balls. sodium alginate is so cool, it's used for wound dressings and impression casting for dentistry and prosthetics (it molds really easily to subjects and provides a super detailed impression, even capturing eyelashes and lip wrinkles).

10:31 I picked up this candy recently from a specialty shop. It was fun to make, but like you said it is so sweet it's hard to eat. I wish the candy had some kind of powder or something crunchy you could dip it in. It was just so viscous and hard to eat on its own.
Spherification! I was wondering when somebody would take this out of the molecular gastronomy chef's kitchen and put it on shelves. Nothing so mysterious about it. It's just basic high school chemistry. You take calcium citrate, flavor it, make a solution out of it, and drip it into an alginate(the fixer), which is usually derived from seaweed. The polysaccharides that make up the alginate lock together around the calcium ions in the outer surface of the drop, forming a stable, edible gel around a still-liquid center. I'd love to see this as a DIY kit in the alcohol aisle for turning juice or soda into spheres for making unique cocktails.
