Could Someone please explain the various steps in this process . Impossible to understand what is going on !
1. Frozen fish (the large plastic packages) are broken down and shaved into manageable pieces. OSHA would likely loose its collective mind at how the workers use the shaving machine.
2. The shaved fish pieces are ground via industrial mortar & pestles (the granite-looking things with the three arms) with salt, spices, starch, egg whites, and finally ice water chunks to cool them down. Again, those machines will rips an arm off without hesitation, scares me a bit.
3. The fish/starch paste is put into machines that form the paste into fish cakes, which traditionally were formed onto wooden boards when this was all done by hand. The chopping machine is impressive, and terrifying.
4. The pink coloring is just that - food coloring - it's all the same fish, usually pollack (which is the same fish that fake crab sticks are usually made from, btw). The fish paste is extruded onto the boards.
5a. Imperfections are picked out by hand and the surface smoothed for some. Pink ones are wrapped in plastic sheets for cooking.
5b. The surface of the fish paste is given a texture - for the cakes that are going to be browned. They show people doing it by hand, and then a rolling wheel that does pretty much the same thing.
6. The cakes are placed onto racks, and then steamed until cooked. They're now eatable.
7. The ones with texture are additionally put through a browning tunnel, which mimics traditional methods of fish cake creation/cooking.
