They kinda go for no violence games so spelunky wouldnt fit, yet they still select the worst of non violent games to compete in

Literally of all the games they could have chosen, they chose the video game version of sports that already exist
I think their thinking is that they're trying to appeal to the pre-existing audience of the Olympics, which are sports/athletics appreciators. Also them using really shitty mobile game level versions is probably a licensing thing, they don't want to spend more on it than necessary in case the whole thing goes tits up, but if it's popular, they will probably have specially licensed higher quality olympic software.
