Any Electrovalent/Ionic compound, in its aqueous solution, dissociates into ions. Acids and bases are made up of ions as they can dissociate H+ ions and OH- ions, respectively. (Yeah, HCl has a Covalent bond but it can dissociate into H+ and Cl- ion in it's aqueous solution, it can be referred to as Ionic sometimes. It is Covalent though. Hydrogen sometimes instead just gaining/sharing e-, can also donate it's electron when it is dissociated from any compound of Hydrogen as it have a small size and thus, other atoms with greater size, i.e., greater nuclear charge can take that electron from Hydrogen making it a positive ion while decomposition of that compound) Here, in the example u gave i.e., HCl + H2O → Cl- + H3O+ HCl dissociates into H+ and Cl- ions (It is not dissociated into H2 and Cl2 molecules because chlorine atom is larger in size as compared to Hydrogen atom, so, due to more positive charge in nucleus, chlorine can attract the one Electron of Hydrogen atom, making it a Cl- ion and H+ ion). The H+ ion, as it is very unstable, it combines with H2O to form H3O+ (Hydronium Ion) H+ + H2O → H3O+ Therefore, HCl + H2O → Cl- + H3O+ You can checkout Polar Covalent Bonds for a brief description.
