I made this for dinner last night. Very good. The tomatoes and tomato paste I had on hand were the "no salt added" type so I compensated by adding a tad bit more salt. I also added a bit more Italian seasoning than called for, it gave the soup a bit more zing. This recipe is a keeper.

I asked the prodigal husband if he would like to do some videos with me, based on your suggestion (that sounds fun). It was DELICIOUS!! Definitely tastes identical to the Olive Garden one, I’m saving this recipe for sure. Made this for my man and he LOVED it thank you so much !
Some changes I make is replace the pasta with broccoli and green olives to reduce the calorie count, grate Parmesan Regiano and throw in fresh thyme and rosemary to add more flavor. Besides being dirt cheap and easy to make/clean up, it's also an effective weight loss tool. Because it's so hearty and low calorie I only need one big bowl to satisfy my appetite for the day. Combine that with only drinking water and some moderate exercise I lost ten pounds in one month.
OMG just finished gobbling up this incredible soup! It’s the best soup I’ve ever made, and I’m a real soup foodie. Only chance I made was doubling the Italian seasoning…that’s it. Thank you sooooo much for this fabulous recipe 😍

I used the cheap regular spinach $1.00 and only 1 cup of pasta and only 1 can of beans ( Canneloni because we didn’t want it to be too starchy and we still felt it was too starchy so next time I will use 1/2 cup pasta and 1/2 can of beans overall and maybe we will add more fresh veggies. Will look for more of your recipes here!

This is very close! They actually use cut Italian green beans and carrots are shredded not diced, and the spinach ratio is off, but is still an excellent version of a minestrone.
