From SE Michigan US, your methods will certainly work, I have experimented with similar ones over the last fifty years. We all coming to a time when having food that does not require special handling will be of extreme importance for most in the world. I dry and pressure can many different meats and have extended storage for the results. Today I went to two Aldi stores early and got a large amount of ground beef and chicken drumsticks reduced to half price. I have spent the rest of the day preserving it. The ground beef I cooked in a separate pot and then canned it, getting 12 quarts and 18 pints. I boned out the chicken and got 18 more pints of meat, the bones and scraps I separated into 3 resealable bags . I have one set of bones cooking overnight to make broth in an eight quart electric pressure cooker, and will do the other two in turn.I just add salt, dried carrot, onion, garlic, celery, and green pepper. I will can the results. I have a good idea when various stores around here put out their reduced meat and have been able to fill jars very economically.

I have home canned food that is up to fourteen years old and I occasionally will open a jar and eat it and it is fine. I keep the jars away from light and in as cool a place as possible.
