Here is the recipe my loves: alessandraciuffo.com/the-best-way-to-make-creamy-carbonara-pasta/ SO excited to have you try it and please let me know if you do! I'd love to see your recreations so be sure to tag me!!
Actually as an Italian this is a 10/10 for me, you really took the best of both world between creativity and tradition, love the process it felt like a michelin star recipe which is new to see for such a traditional dish as carbonara. Plus the fact that you used guanciale and not bacon makes me so happy that I’m gonna cry ahahah Love from italy❤🇮🇹
I'm Italian and I gotta say well done! Nothing wrong here, and I think it's actually quite a interesting twist. I'd just add a lot more black pepper, but that's personal preference!
Finally someone who’s cooking a proper carbonara with proper ingredients and proper Technique! I like the twist though! Have seen it quite often now and will surely try it very soon. Love your videos by the way!
Sounds amazing. I learned two things from Luciano Monosilio‘s (also known as the King of Carbonara in Italy) videos you might wanna try: 1. He prefers Spaghetthoni and so do i. It will bring a new layer of texture to the carbonara and it is easier to cook to al dente. 2. He cut his Guancale in thicc cubes. That allows you to cook it crispy on the outside and juicy in the inside.
This is almost exactly how my Italian grandma makes it. All I would say is grate equal parts pecorino romano and parmesan, instead of just pecorino. This carbonara is literally perfect. Sometimes I wish my mom didn’t move to America so I could live in Italy with my grandma’s amazing cooking. 😭
You are by far the most accurate american i’ve watched making a carbonara. You even pronounced it correctly and followed the traditional recipe. I own a café that makes italian traditional pasta and i never used egg whites with the sauce, and when you did it just elevated everything. Well done 👏🏽
Will try this one tomorrow! ❤ my husband loves authentic carbonara but I always fail when I try to make it. 😂 hopefully, I’ll be successful with your recipe.
I had the best carbonara ever, in Almalfi coast. From the way you made yours , I can tell that it’s magnificent! Now I’m just craving it 🙄 but thanks to your method I think I might try make it😁
Today I made pasta following this video and it tasted like that pasta that I ate in some small restaurant on my trip to Italy with my parents when I was like 12 😭❤️ Thank you, from now on this is gonna be the only way how I’m gonna cook carbonara✨
I am italian, i am.. VERY AMAZED! from the way you made the Carbonara 😮😮😮😊😊😊, and trust me, other italians that might watch this will be amazed from this italian recipe that you just made 😋 😉 😊😮
Beautiful! Thatsa good looking carbonara! 😍 I will try Your technique of egg separation and fluffing the carbonara, next time. I’m skeptical, but curious. 🥰❤️
@@MaxKingsley72 Are you soft in the head? Did I say I wasn't American? Lol, I grandfather is from Italy and my Ex father In law as well. Her pronunciations are spot on. You're just some dork.
@Max Kingsley You can sound completely American and be Italian, kinda the way America is. I'm not sure why you stated this? Pronunciation? Posh attitude if nothing else but petty.
Not easy “changing up” a traditional Italian recipe while still not changing the dish and having a horde of Italians come after you, but you nailed it. Perfect balance.
I use Pecorino Romano and Grana Padano. But, I like this little trick with the egg whites. I will try that one tomorrow. (Everything else I pretty mich already do). Nice twist on a classic.👍
Pretty much the standard recipe except for the egg whites part. As long as the eggs don't get curdled it works. A better variation is to mix grana and pecorino to reduce the saltiness since guanciale and pecorino have lots already
Very interesting recipe. Mix separetly egg yolks and egg whites to foam. Pepper in the pan gave the more flavor to the pasta. But the pepper its crucial for this dish. There shoul be little more pepper in the sauce. But this is proper carbonara.
Exactly the way I do it - except: I roast the pepper first put in cold pan and heat it up grandly until it smells - beside and put it later on 1 Minute before servig
Know that there is a big difference between culinary school and working in a restaurant. I work in a restaurant myself and love it but it is nothing compared to culinary school except for some techniques
Or you can use a whole egg and don’t use too much pasta water. Her adding back in the whisked egg whites adds barely anything to the dish. I tried both ways whole eggs and separate. No different imho. It’s all about how much pasta water you put in for creaminess

It looks delicious but it’s too much hard work when you can just pour in fresh cream?
Ps its egg yolks not whites. Italians are hunting you down as we speak 😂
I am amazed from this, nice job in making the italian recipe!! [I am an italian]

Wow, thank you so much 🥹❤️ this is best compliment I could’ve received because that was really my goal - the elevate a classic 🫶
A lot of Americans use bacon because it's so hard to find guanciale in the US. I checked multiple local stores and none had it ☹️
Italian here too, I completely agree! This is not what I would do at home, it's the fancy restaurant version. Wither way it's a real carbonara!
@@sassychimpanzee7431 I fully understand your struggle! And it's soooo expensive to order online 😭
As another Italian from Rome I approve gr8 carbonara.

That reincorporating the white thing is intriguing!
Also using some fat to mix yolk and cheese is a great idea!
Can't wait to try it!

Ive been looking for recipes for Carbonara and this is the best I’ve seen 🙂 thanks
I have never thought about this method of cooking. Thank you!

That plate is from Rome , parmisan is from north italy - mixed is in pesto
Sounds amazing! It's not traditional, but I would argue it's better. Parmigiano is flavorful, and I love that it's less sharp than Pecorino.❤
I've been dying to find a good pasta carbonara recipe, please would you share this with me? This looks so amazing!!❤

I think it is because she’s Italian or at least part of her family is 😅
I agree. I made carbonara the other day and I just used the whites for something else. It didn’t occur to me to whip them and add them at the end.
I am OBSESSED WITH YOUR VOICEEE
I don't know why, but I love watching your cooking videos!!! Everything looks absolutely delicious!!!!!!!!
Looks delish. All needs set of sauteed veggies.

Just Gorgeous! There’s no cream in carbonara! Pasta Queen would be proud.
Never seen it made like this before, looks great. Please don't buy a whole wheel of parmesan to make a pasta in like every other stupid cook atm.
"If my grandmother had wheels she'd be a bicycle"
