Regarding Watto’s refusal to take Republic Credits, I headcanon that the reason for doing so was because he didn’t want to get in trouble with his Hutt overlords, which would find such a transaction to be suspicious. Remember, on Tatooine, the inhabitants purchase their goods with the wupiupi, which I assume is a Hutt currency. If the Hutts found out Watto was getting paid in credits from off-planet, they’d have no qualms to send whatever hitmen they employ to bust his kneecaps to get him to squeal where he got his credits from.
Let’s keep in mind that despite the emphasis on actual precious metals being used as the basis of currency, that’s just as much of an illusion as the credit standard. When push comes to shove, people have and will abandon the the so-called objectivity of gold or silver until it’s convenient again. Value only exists where it is perceived.
