That temperature gauge is a bit of an oddity in regard to what it’s reading. It doesn’t appear to be reading coolant temperature but possibly head temperature close to the coolant cavity near the forward cylinder exhaust valve. I have seen temps in the 240+ degree range, which if that was total temperature of the coolant, the coolant would be close to overheating. But because of where the sensor sits, we are seeing the highest possible engine temperature. If you take a temp gun to the engine when the gauge is reading 220+, the rest of the engine is well below 200 degrees. But fear not at what the temperature gauge reads, HD also incorporated an engine temperature overheat warning. I can’t figure out what temp that happens at. I noticed that after only a minute or two after a cold start, sitting at idle, the radiator fan turns on. Which I find odd as the temperature gauge is still reading sub 150 degree range. This method of temperature reading is very similar to 2 stroke racing kart engines where the sensor was attached to the spark plug base to read the hottest temperature of the engine used to adjust the carburetor mixture setting. There really isn’t any good explanation of this in the touring handbook which chaotic and nonsensical so, I am going by what I can find off the internet.
Do you know what temperature is considered normal operating temperature? I understand that ambient temperature does impact operating temperatures. So, on a hot day at 100 degrees or above, my bike will run as high as 242 sometimes, so do you know what is normal operating temperature on a hot 100 degree day? Thank you

Its not real clear what this gauge is actually monitoring, and I will probably be asking the next time I am at the dealership so I have a better understanding of what we are seeing. As mentioned in the comment above, you could take a temp gun and measure the engine temp to get a better result. The manual doesn't have much in it by way of what the normal operating temp should be. Even though ambient temp would have an effect, the cooled heads on the 2024 models, along with the EITMS should be sufficient to keep it within a satisfactory range, unless there is something wrong with either of those systems.
Manual says to check oil at 200 but doesn't say what temp range is normal. I have seen some different things in forums but I would say maybe 155-230 would be a close guess. I think the people I saw who were wondering about it, were just feeling like their bike was super hot under them, and weren't sure how to see what the temp was.
