Shubha, I have used JOSEF MARC Farine De Ble unbleached flour as that was the only brand delivering to India during the lockdown last year. It is very difficult to get unbleached all-purpose flour here.

Fine. Generally the atta taste is not felt due to the flavors and acidity of the orange juice. I am not sure what has gone wrong, but this may be due to the quality of the atta. I think if it was baked for 5 to 10 minutes more, the atta taste would have not been there.
Bake for 180 degrees Celsius for 30 to 35 minutes. But the baking time will vary depending on the oven type and temperature inside the oven. So you can check after 25 minutes to see if the cake is done or not. Preheat oven for 15 to 20 minutes at 180 degrees Celsius prior to baking.
Hi i am following ur recipes past 1 month getting results exactly ... but today i tried this recipe...the cake got cracked but soft n crumbly why i little bit added 1 tbsp of water n i have 13 ×6 bread pan only
It could be due to the dimensions of the pan or it has not been baked completely. I think adding 1 tablespoon of water should not make much difference. May be it needed more time to bake. Hope this helps.
Hi, I tried your banana and chocolate cake both came out very good but your mango, pineapple upside down cakes were total disaster for me😔😔. I tried exactly the the same process and measurements and my both cakes came out very bad. Pineapple cake was very well cooked from the top and even toothpick came out clean I still left it in the oven for 5 -10 more more mins in total I baked it for 55min for 180 c and when it cool out I took it out and it was totally uncooked, watery with the gooey batter and top was about to burn.. same happened with mango cake I baked mango cake for 1 hr 25 min to avoid pineapple cake disaster but same happened to this cake as well.. my chocolate and banana cakes baked in half of the time and perfect baked.. pls advice what could have gone wrong. Did you bake in an OTG or a convection microwave oven. If baked in an OTG, did you use both the heating elements and what kind of baking pan you have used? I hope you used the correct measuring cup measurements.
Hi I baked in normal oven (OTG) and used correct measurements as per your receipe, the bottom part was completely uncooked after 1 hr 20 min for mango cake and 55 mins for pineapple cake both the top about to burn.I baked same quantity of banana and chocolate cake in 40-50 min in same oven and thought when the toothpick comes clean it should have baked but to my dispointment, pineapple cake was very gooey, uncooked and watery from the bottom may be due to pineapple rings (which I used from the tin and took the juice out) and the mango cake also was completely uncooked from the 1/4 of bottom part..so disappointed to bake again as it was for someone’s birthday😔😔
Thanks for the inputs. When baking in an OTG, either the bottom heating element should be used or both the top and bottom heating rods can be heated. Using both the heating rods gives even results in baking with both the top and bottom of the cake getting baked well and browned well. If you do not fancy a top golden layer on the cake, then just use the bottom heating element. If you bake with only the top heating rod on, then the results won't be good as the top will become browned, crusty and even hard, but the bottom of the cake will be undercooked. For the pineapple cake, looks like the sugar syrup from the canned pineapple has leeched into the cake making it all syrupy and wet. When using canned pineapple press them between paper towels so that the excess syrup is absorbed. For the mango cake, the baking time is too much. It should just take about 40 to 50 minutes in a normal regular oven. If you use a glass pan or silicone pan, then it will take more time to bake as both are not good conductors of heat. If the batter has been mixed too much, gluten strands develop and this gives a dense gluey texture in the cake. When baked the cake looks like it is not baked but it is actually baked. This would have happened with the mango cake. Even the baking powder or baking soda should be active and fresh. If not, then also the cake will have a dense pudding like texture. Both these recipes have been made by readers and they were successful. In baking there is a possibility of many things going wrong, with the quality and freshness of ingredients added, the temperature inside the oven, the kind of pan used, the material and size of pan and also the mixing or folding of the batter. For most whole wheat batters, when mixing or folding them do it with light pressure from the hands and not mix too much. This makes the batter gluey and it looses its volume as gluten develops in the batter. I hope these suggestions and tips help you.
I have regular oven which is has only top heating system it doesn’t have bottom rod and it also have fan forced option but I never used the fan forced mode.. I was wondering how come banana and chocolate cake baked evenly in same oven and not the other two cakes.
I'm planning to make a double layer 9" round cake. Should I double this recipe for one layer? Do you think it will hold firm? It looks amazingly crumbly (something I love), but will it be OK for decoration?
This is a soft cake and I don't think it will work. It can collapse under all the frosting layers. So I would not suggest to make a double layered cake. A single cake with an orange cream frosting or an orange chocolate frosting should be fine.

@@malacosgirl Add less orange juice instead of reducing the flour. Sinking could be due to a high temperature in the oven or opening the oven door many times. If you grease the pan well, then the cake won't be stuck.
