This Amish recipe uses only water bath canning!

My mother water-bathed canned all the time and I’m still here at 66 years old. But she always peeled any potatoes with thick skin. Peeling potatoes before canning can help remove bacteria that may be on the outside of the potato. Some say that the dimpled surfaces of potato peels can trap bacteria, including Clostridium botulinum spores, making them harder to fully sterilize.
I have somewhere between 75 and 100 pounds of potatoes to can tomorrow lol and yes I’m doing them Susie style

@@homesteadgrub my 10 yrs old son and I started about 0900 and got 38 quarts I was totally done about 9:30pm he cut out on the last 7 quarts so I say he stuck in there like a little trooper

Check out some of the videos on Red Rose Homestead where Pam walks the new canner through all the steps of using a pressure canner. Using a pressure canner is not hard and there is no danger if you follow the correct steps. Pam will walk you through step-by-step and you will not go back to a non-approved method in my opinion.
Have you tried pressure canned potatoes? Inedible, in my opinion.

Yes, do pressure can, if you want mushy potatoes. If you want nice firm spuds, water bath is great.
