If you were using this on pork butts, do you think it would be okay to leave the pot of mop sauce on the smoker throughout the cook? seems like the most efficient way to do it but kinda concerned about it evaporating too much or overcooking/burning the veggies that are in there.
I would leave it on the smoker until the veggies have rendered and gave up their flavor and then strain it. What you have left is pure mop sauce and no scorched veggies.
That is correct Tim if you want to duplicate the recipe precisely. Why at the beginning and end is a mystery to me. You still have to soften up that last pepper.

I also read that he started a company called T&T BBQ, which gives out "a" mop sauce recipe. I suspect he might have a secret ingredient not on the list. But, he seems like a pretty sincere fellow. I'm happy he's been able to start a business. I hope it goes well and he's able to do the kind of work he enjoys. Especially since BBQ beings so much joy to people! thing is it's the grandfather's recipe, they didn't have Ghee or Tallow from Costco back then it was lard. plain and simple
