It seems a shame to waste the skin of the eggplant that you peeled off so blend the eggplant skins (char first) with an equal amount of tahini and half as much ice water and then minced garlic, fresh lemon juice, and salt and pepper to taste. You get a side dish with that!

Peeling the eggplant skin is a personal choice for this recipe, as it helps create a softer texture for the Borani Banjan and ensures the flavors of the dish come through without the slightly bitter taste that the skin can sometimes have. That said, you bring up an excellent point about reducing waste. Making something creative like a side dish from the skins is a fantastic idea!
