Not folding the collar is a great idea! I am knitting the junior size for my 3 year old son and I keep redoing the collar because it seems so bulky! I hadn’t considered doing an unfolded collar 😂

I know I feel the same! I think because we don't know how to do continental, it just looks more advance to us and we feel like we're missing out. But at the end of the day, English knitters can knit exactly the same garments as everyone else so it really doesn't matter 💕
I knit a red hat (using knitting for olive’s merino in rust) and it stained my seeknit needles. But after washing, the dye didn’t run any further. I think yarn with colour fast dyes will stain wooden needles.

Yes! The jumper is generally quite light so I didn't think the folded collar was necessary! 🤗
