Sir, as we know the values of pH,hardness etc . we can estimate the water quality manually like pH value of water 5 not potability. 7 means potability etc then what is the use of by doing this project by ussing ML.

Look for the unique idea based on the data available, I have ideas but main constraint is dataset. So look for the unique dataset and then build the AI ML use case around it
