  • Recipe for 18 egg tarts:
    Whipping cream 1 1/3 cups (320g)
    Milk ¾ cup (180g)
    Sugar 7 tbsp (80 grams)
    Hot water
    Set the liquid mixture in the hot water
    Stir until the sugar dissolves
    Take the mixture out
    Crack 2 whole eggs
    and 2 egg yolks
    Mix well
    Pour the eggs into the milk mixture
    Mix well
    Sieve the mixture twice
    18 tart crusts (from Asian market)
    Fill each crust 90% full
    Puncture any bubbles with a toothpick
    Bake for 23-25 minutes at 400°F/205°C
    Allow them to cool down
    Ready to serve
    Delicious!
    Recipe for 9 egg tarts:
    9 egg tart crust, milk 3/8 cup (90 grams), whipping cream 2/3 cup (160 grams), sugar 10 tsp (40 grams), 1 whole egg and 1 egg yolk.
