If I don’t have any leftovers I’ll boil an egg or make a grilled cheese sandwich to have something substantial.

Yeah, she wasn't mean or holier-than-thou about her vegetarianism either. I like her a lot, very respectable. I also ate like her in college and sometimes still do! (There were a lot of dips, fish sticks, nuggets, and I also still love slapping halloumi cheese into the air fryer for a bit so it gets crunchy on the outside, but stays moist and juicy, too... I like putting barbecue or A1 sauce and dried basil on it after and eating it. It feels fancy, but it's just yummy cheese in a dip, fff.
The whole point of a 'girl dinner' is that's is something that YOU enjoy alone and it takes YOU minimal effort. So everyone's is gonna be different. Mine changes, at it's spinach egg drop soup with chicken/crabstick/frankfurters (any meat that we have leftover or on hand).
My best girl dinner is basically anything in my fridge or pantry that can go on a charcuterie board. Pickled things, bread or crackers, cheeses, meats, fruit or jam, nuts.... It's not unhealthy, it's balanced and leaves me satisfied and is actually enjoyable but easy and no clean up if you just toss it on a paper plate

I ONLY buy deep discounts. All cheeses can be frozen, so I stock up when things are auper cheap. I also have to use the food bank right now, so they often have certain produce in abundance. The only way to eat it in time is to actually preserve it. So at the moment I have apple butter, hot sauce, plum vinegar which I will be using in a berry shrub and reduction sauce, as well as the raspberry vinegar, and today I have to preserve my oranges into a marmalade as well as make lebneh cheese balls from the ridiculous amount of yogurt I got. The limes I will be preserving in salt and I still have onions to pickle or fry. I also stock certain items from dollar tree and keep them in my pantry, their raspberry preserves are amazing, they have a fantastic selection of jarred olives, marinated mushrooms, crackers and spreads....I also save what I get at the food bank like nuts and dried or canned fruits. I always eat well, but I always prepare what's eaten, we never ever eat out, and we cook according to what we have on hand, and only buy deep discounts or grow what we can and catch what we can. Also, making my own jerky has been amazingly delicious and affordable. I just make suree to get whatever ateak is under $4 lb or I wait to make it @SobrietyandSolace
The tortilla was straight disappointing. That’s more of a struggle meal. In my opinion, girl dinners are usually made of a mixture of different foods that mostly complement each other is still satisfying.
The only reason no one thought the last one didnt count as "girl dinner" is because the other girls don't seem to cook regularly. Last one was just random leftovers thrown together, which is 1000% what my girl dinners consist of.

In India when people have to describe extreme poverty they say they grew up eating roti (same as tortilla) with oil and salt smeared on it. So looking at her with just tortilla and her being surprised that other girls want at least ketchup on it surprised me😄
I think the difference is it was cold. Because in Mexican culture we also like to eat tortillas by themselves like a homemade flour tortilla with butter delicious. But a cold store-bought flour tortilla that’s not it.

Its been too long my girl dinner: left over white rice in a bowl, drained can of tuna, drained small can of cut green beans, drizzled balsamic vinaigrette, mixed up, and one min in the microwave.
I thought of a similar thing but for me its often canned tuna and next to that bread with cheese and tomatos on top or with butter and cucumber slices and sometimes I seperately add grilled cheese to the plate. Yours sounds very tasty!
I actually love a good tortilla, like the ones they make in the back of a Mexican grocery store, heated up dry on a pan, and brushed with salted butter. So good.
Even better, parathas. I got a huge box of frozen readymadenonion parathas from the a bulk reclaimed grocery, and that has been my go-to snack along with a cheese stick for a little protein.
As a SE asian.. i just realised that i dont think I've actually ever had "girl dinner"😅 it almost seems illegal where I'm from. Instant noodles can be amped up so much via sambal, spices, eggs, veg, etc. Takes like... 5 or so minutes too. Plus, there's always leftover rice. Pair that up w a fried egg, sambal of your choice, whatever else is around.. BAM! done.

In India when people have to describe extreme poverty they say they grew up eating roti (same as tortilla) with oil and salt smeared on it. So looking at her with just tortilla and her being surprised that other girls want at least ketchup on it surprised me😄

I think the difference is it was cold. Because in Mexican culture we also like to eat tortillas by themselves like a homemade flour tortilla with butter delicious. But a cold store-bought flour tortilla that’s not it.
@sheeshialove1 still at least you are applying butter and it's fresh and if you add salt while mixing flour into a dough then it will taste good. Although it won't fill belly for long period but you can have it as snack.
@МаусГастон yeah but now imagine just eating a stale cold plain roti with nothing. You are not going to like it. We make fresh roti and if it's stale then we usually heat up on pan adding some oil or ghee and it tastes good then.
My grandpa used to say this all the time. "What, all this for lunch and that for lunch - when I was this young, we had one chapati, and one bit of ghee will be on the middle of that one, then back out to school". It's similar to the global "my commute to school" story

Its been too long my girl dinner: left over white rice in a bowl, drained can of tuna, drained small can of cut green beans, drizzled balsamic vinaigrette, mixed up, and one min in the microwave.

I thought of a similar thing but for me its often canned tuna and next to that bread with cheese and tomatos on top or with butter and cucumber slices and sometimes I seperately add grilled cheese to the plate. Yours sounds very tasty!

I actually love a good tortilla, like the ones they make in the back of a Mexican grocery store, heated up dry on a pan, and brushed with salted butter. So good.
But the lady's was just plain, not warmed with butter and salt
I grew up eating plain roti (another flatbread) as well so I like a plain tortilla from time to time if it’s really soft/a good quality one
Even better, parathas. I got a huge box of frozen readymadenonion parathas from the a bulk reclaimed grocery, and that has been my go-to snack along with a cheese stick for a little protein.

As a SE asian.. i just realised that i dont think I've actually ever had "girl dinner"😅 it almost seems illegal where I'm from. Instant noodles can be amped up so much via sambal, spices, eggs, veg, etc. Takes like... 5 or so minutes too.
Plus, there's always leftover rice. Pair that up w a fried egg, sambal of your choice, whatever else is around.. BAM! done.
Same, idk how I would survive on "girl dinner". Every dinner I had growing up was a hot meal without fail, almost always with carb+protein+veggie
