The citric acid is for flavor and the Sodium citrate is to buffer that acid. If the citric acid is removed you may not need the sodium citrate unless there is acidity from another source added to the recipe.
What is the shelf life on this vegan gelatin after it has been processed. If I wanted to use it to make gummies for commercial reasons how long would you say they would last if properly sealed/stored. Thank you Love your products

Yes, You can still use this recipe and replace the water with fruit juice and sugar with agave. Just know that the Vegan gelatin requires heat and heat will change the flavor of the fruit juices.

Blooming is soaking the gelatin in water to get it ready to use. For sheet gelatin this makes them soft and ensure when you melt them they will disperse and gel evenly.

Yes, but I would suggest an emulsifier to help, polysorbate 80 is the best for it.

You wouldn't get the proper texture with agar because it forms a brittle gel and not an elastic gel.
