Well in the US at least there's a belief to keep separation of church and state for philosophical reasons and despite what some people might think not all factions of Christianity get a long with each other all the time. When my professor a long time ago mentioned about the style of the country he said it was based off of the 3 major Abrahamic religions of the world that were related, Christianity, Judaism, and Islam in a way I can't really remember or can explain. Having a religious neutral design honors the philosophy the founders were going for. Also I remember coming across some references implying Christianity originally had a stigma with showing religious imagery or idols in the early days. So... in a way we're following Christian rules. I think... (I probably will be wrong in this statement). In other countries though I am very sure they don't have the same thing so it's different for them. Personally I have slight mix feelings of "Christian countries" putting religious imagery on their banners. I believe if someone is going to do so most of the population should actually be Christians and devout. If most of them are atheist than what is the point of having it? Is it just to gain good luck or hopefully win favor and approval of God? God is omnipotent and indifferent towards nations. A country being conquered doesn't mean anything to him because it's part of the great scheme he has. I believe he tends to focus a lot more on the individual person and his soul than the nation he lives in. If someone is going to put religious imagery on stuff it should be the actual devout and religious individuals that do follow the religion and not a pretender or a "cultural Christian" (Someone that just follows customs because it is part of his nations culture, but doesn't really believe in God or follow the rules). I find this very pointless. Putting religious stuff on things should be a purely a choice the true devout do and only on their own personal stuff, not something at a national level where majority of the people aren't really followers.

Philippines flag is special. When red is on top it means that the nation is in war, and when blue is on top it means that the country is in peace.
The Mexican flag actually has the same meaning as the Italian and Irish flag. Green symbolizes Catholicism, White is peace and posperity and purity and red is the blood that was spilled by the soldiers defending their country. They are all different tones of green and red but the same concept. But yeah about the Eagle on top of a cactus holding a snake, you got that right and described it quite well.
Antonio Maldonado I read somewhere that the Mexicans made their flag have those colours directly because of Italy, as Garivaldi, who was Italian, helped in some way with their independence or something. I don't know. I know Garivaldi was in fact Italian, but I'm not sure about the rest.

A small fact on the Philippines flag: whatever color's on the top symbolizes the country's current state. So if the Philippines went to war with another country the red goes at the top and the blue goes at the bottom. If you display the flag wrong (thank god you manage to not make that mistake) huge controversy would go against you putting the red above the blue.

I'm Indian, and if you ask any Indian today most people will say that the Saffron means prosperity and the green means agriculture. It's mainly because they don't want to associate their flag with religion now.
