Initially you can use simple drawing sheets. But if you can afford, and can buy then the sheets of any brand must be 300 gsm. I gave links of the sheets which I used in each of my demo video. You can also check them out.

Yes You can but, Canvas is for painting not sketching. But if you wish to do it on canvas, you can do.
