I’m from Baton Rouge Louisiana and we eat Tripe on a regular. Cook them down in fresh and powdered seasonings and serve over rice after a really good cleaning of course.
Just the way we like it. Coloureds like eating it as a curry and then you can also try it with white mielies (corn) with spinach and butternut as sides

This is very delicious food!!!!! We called it "Mondongo" on Curaçao where I am from. We eat it stewed or in soup. The mondongo soup is eaten throughout the year. However in December it is cooked much richly. You should try it once.
