How To : Spicy Beef Noodle Soup | Lao Food | Khao Poon Nam Seen

SPICY BEEF NOODLE SOUP
INGREDIENTS
1.5 lbs Beef flanks
1/2 lbs Pork's Blood Cake
2 Bamboo Shoots
1/2 a pineapple
6 slices of galangal
6 Kiffir lime leaves
20 + 8 cups Water
4-5 tbsp veg. oil
Vermicelli noodle
Vegetables ( cabbage, banana blossom, mint, Vietnamese coriander, bean sprout and lime)
CURRY PASTE
15 Japones chili, soaked in water for 15
min.
1/4 cup garlic
2 tbsp Galangal, sliced
1 Stalk lemongrass, sliced
1/3 cup Shallot
4 Kiffir lime leaves
1/2 tsp Black peppercorns
1/2 tsp coriander seeds
2 tbsp Shrimp paste
2 tbsp Korean chili pepper flakes
1/4 cup Water
SEASONING
1 tbsp MSG
2 tbsp Salt
2 tbsp Fish sauce
2 pieces of Rock sugar

Thanks. I didn’t know what kind of meat to use. Now I can try. Tho I didn’t know pineapple goes in. Just for added flavor I guess. I do remember my mom putting tomatoes.

You have that beef Kao Poun like they have in Sayabouly Province .... they grilled garlic and then small chilies then put into the soup
