Oh my goodness! I've never liked okra...until today. I only bought some because it looked so fresh and all those lovely Indian ladies at the market can't be wrong. Luckily I found this video. We just ate it as a snack and it's so delicious I can't wait to get back to the market to get more. To anyone who is unsure-there is zero slime, as promised, and the flavors are just wonderful. Oh yes they can be unslimed if cooked in this way . You can even add a few drops of lime/lemon juice at the end. I am sure you will like okra if you make it in this way. Please do give it a try and let me know. You too have a wonderful weekend my friend.

I tried the recipe and it turned out to be nice , thanks to your video 🙏 The key here , where Western people fail cooking okra , is to get rid of the slime . MasterChef Gordon Ramsay has spoken on this point . I was also surprised to hear Chef Ramsay refer to a Okra Stir fry as Bhindi . Obviously , he has eaten so much Indian Okra recipes that he knows the Indian name by heart 😆 BTW , when did Bhindi become Okra ? We learnt in school that Bhindi is Ladies Finger , Baingan is Brinjal and Dahi is Curd . But now in supermarkets , they have Okra , Aubergine , Yoghurt 🤷 And who knew Potol / Parwal is now called Pointed Gourd ? 😂

Funnily I never liked fried bhindi, aka dharosh bhaja, as a kid. May be because I never tasted your Ma's bhindi, but I quite like it now. In fact, an entire series can be made on these pan fried veggies (chechki's) as an accompaniment to daal.

Yes Emily this is my ma’s recipe. She just uses turmeric powder but I spiced it up a little bit as I am the “ spice lady “ 😄.

Chilli powder is always optional . You can also leave out the other spices and do it with just turmeric.
Is coriander the same as masala?
Masala is a combination of different spices. Ground coriander is one of them.
