May I suggest a tip. Get a soda bottle, drill a hole in the lid to fit a rubber gas hose into the bottle. Put about 1.5” of brake fluid in the bottle so that the end of the hose is in the fluid. Put the other end of the hose on the brake bleeder valve. Pump away. Because the the hose is in the fluid it won’t suck back air. Very quick and efficient.

I've used whatever I could to weld things for decades. I finally bought myself a nice proper welding table with a machined surface, and 5/8" holes for clamping. The days of me kneeling on a concrete floor to weld are well behind me, and having two knee replacements over the last two years was my excuse. Having the right tools for the job really makes the difference. Also when using your small grinder (5") especially in a tight space, make sure you use the handle that screws in the side. That grinder can easily catch on something and spin around and pass through your arm before you know it. Trust me on that, if not I'll show you the scar on my arm that took 150 stitches to close up. Battery cables are fine but make sure the insulation isn't cracked.

For my parents 40th wedding anniversary, I got them t-shirts that said, "40 years of bleeding brakes together."........ And that's not an exaggeration.
My buddy down here in Tucson owns a shop called BumpSideAddicts and he build these all the time. His daughter has a 800hp 12v Cummins with an NV4600, if you have any questions or are looking for one, I’m sure he’s a guy who knows where you can find a rust free chassis. I’d be happy to bring it up to you as well.
There’s a YT channel called “the hoof gp”- he’s a cattle hoof trimmer in Scotland. I think the grinding wheels he uses would be perfect for the 8-sided cabin.

most log cabins i have seen have some kind of sealer, caulk, or something between the logs. What is your reason not to or plan in the future of this build?
It's for starting. Diesel engines run on very high compression. It takes a big starter that pulls a lot of amps to start one. So you need two batteries. On old Deisel heavy equipment, they used pony engines to start them. They were small relatively easy to start gasoline engines that would be revved up and then slowly engage to start turning the big engine. Once the big engine was running, you shut off the pony engine. And basically let the diesel engine run all day until it's quitting time. On a lot of old Diesel tractor semi trucks, they used air starters that used compressed air to get things turning. If your tanks were empty, there was a hand pump. There was also Coffman starts in old diesel tractors which used a big blank shotgun shell to get the engine turning. You used a hammer to detonate the shell and start the engine. BTW - my uncle had one of those early 80s OldsmobIle Delta 88s that had a Diesel engine. It had two batteries, also.
