Pam - I love watching you enlighten us all - even those of us who have been canning for years! I have divided my calendar so I also can throughout the year. I freeze my tomatoes so January is tomato sauce month. That includes pizza sauce and pasta sauce. February is time to use up those odds and ends I have been saving so vegetable and onion stocks are going into the pantry. March is time for caramelized onion jam, carrot cake jam, baked beans, and some odds and ends. April is busy with holidays, so canning is minimal, but in May things really start moving. I don’t grow my own cucumbers, so I purchase organic Kirby’s and put up all my pickles and pickle relish for the year. In June, strawberry, blueberry, and grape jams, along with apple-pear butter and assorted jars of fruit. July and August bring harvest from the garden and my dehydrator runs almost constantly as I dehydrate herbs and can the goodness from the earth. Depending on the weather, potatoes are dug, and preserved as well. When September comes along it is time to take some of the garlic I harvested in July and turn it into garlic powder and minced garlic. October is the time to pickle zucchini and grind the wheat berries from the wheat I have grown. November is soup month. With the cooler weather I don’t mind keeping the stove going for hours and hours as I can up a variety of soups, beans, and pie fillings. Finally, in December, I prepare for Chanukah (sometimes a little earlier), with applesauce, pineapple conserves, and a variety of goodies to be shared. Yes, there are many other canning projects throughout the year, but having this ‘outline’ of what my year should look like removes some of the anxiety of having to get it all done in a short period of time! Love to you both from a handicapped old lady who lives in the city and ‘farms’ on her back piracy.

This is my new favorite kitchen gadget! When I first saw this video last summer (it's May of '24 now), I clicked on the link in your store and ordered it right away. I had been using the attachments like you use in the first part of the vid, but as I didn't have a food saver, I had to use a hand pump vacuum sealer I got with the attachments. Well, after 3-4 jars, my poor arms felt like wet noodles! (Plus I was never sure if the seal was really adequate). When I got this one in the mail, I went and redid the seal on all the jars I'd done before and finished sealing all my dry goods, about 75 jars, all told. Took MUCH less time than the hand pump would have!
Went back and wrote a review on Amazon, and plugged this channel in my review!

I saw that vacuum sealer on another channel a couple of months ago, and ordered one. It's great, but I do love my convenient little hand held Food Saver one, that is rechargeable, too! I got it at Target a couple of years ago, for around $24. I have never had to get out my big Food Saver machine when using that handy little gadget. It's very small, so I am putting it in the RV, and will keep the new one (that you used today) in the kitchen. I got the jar opener a month or so ago, and love it. I had been using my hand can opener, similar to yours. Tip: I just use a folded paper towel, or the corner of a dish towel (folded over) to prevent the dimpling, when using it. Thanks for sharing!!

For the rechargeable handheld vacuum sealer you don't have to guess at the time needed for a jar to be sealed: you can tell when the vacuum is complete by listening for the change in tone/sound - it becomes higher pitched when the vacuum is complete.

After a few days I checked them. I was a bit disappointed to find that the kids had come unsealed. Some jars with lids were new, some were used jars with new lids. Pam: Heidi over on the Rain Country youtube channel uses a hand operated brake bleeder with- the plastic hose that came with your vacuum sealer and the same white attachments to vacuum seal her jars. The good thing about it is, it is completely mechanical and requires no batteries or charging. The bad thing about using a brake bleeder is that it does require some hand pumping action. These hand operated brake bleeders are sold at lots of automotive stores and Jim might like to have one of these if he repairs any of your vehicles. If not still good to have as an emergency back-up for off grid and grid down situations.

When I use my foodsaver vacuum sealer attachments, I have the exact same problem with the blue ring coming out, along with the top not sealing. It drove me nuts. I didn't know about the second lid trick. I found out about the automatic vacuum sealer through The Purposeful Pantry's you tube channel last month. I bought it and I Love it!.
I had so much trouble trying to seal some Kerr jars, so I asked my husband to look at it and he figured out why I was having so much trouble getting them to seal with the foodsaver attachment. The Kerr jars don't have a glass ring under them like Ball jars do. It's the ring that the attachment sits on to make a vacuum. I have a case of old Kerr ½ pint jelly jars that I was using to store my dehydrated mixed vegetables that I buy every week at Aldi for .87 cents for a 12 ounce bag. It's a nice mix of green beans, carrots, corn and peas that I use frequently. It's more efficient to store them in a dry state, than to take up precious freezer space with a bunch of bags.
Back to the automatic jar sealer, I've found that it takes 20 seconds with mine to seal a jar. When I turn mine off I heat a rush of air and a tink of the lid sealing. No more frustration trying to seal regular mouth jars including the Kerr brand jars 😃. This is such a great gadget!!

Hi there! just started watching your videos in the few weeks. Btw, I love your curly hairstyle :-) I wanted to ask about canning meatballs. I know you can't use the usual meat filler such as breadcrumbs or oatmeal, but can you use keto nut crumbs or even coconut flour safely? I was just wondering because I was given a bag of seasoned nut crumbs and thought I might try it in meatballs... Oh and is it safe to stack the jars 2 levels in a pressure cooker?

You may have noticed a new picture and name. I'm formerly known as Nebraska Prepper Nurse. My account was hacked and I had to change everything. I will no longer be using Amazon for anything. I've been watching you for years.

I stumbled on the first gadget when, after getting my Harvest Right vacuum sealer, I realized that there was no way to do jars with it. Silly of them not to have that option with the unit...I love my small suction jar sealer, too. I haven't used the mylar bags, just because I don't want to add to the plastic problem. I like to see what is in the containers and glass is so pretty when filled with different colors of food. Right now, I've got some strawberries freeze drying. Every day for a few weeks now, I've been picking about four quarts of them. Although I love them, there are only so many you can eat each day. As my food forest grows, I'm thinking that I won't have to buy so much fruit through the winters. Very exciting.

I just ordered a vacuum sealer yesterday. The one I have just doesn't have enough power and I don't' have an attachment to fit on my Seal A Meal. This may just be the ticket I hope.

I saw one of those vacuum sealers demoed on a dehydrating site and ordered it. I’ve seen the jar opener and will put it on my ever growing Amazon list. 😊 I ordered the Ball and usda canning books plus a few meals in jar books. It’s time to unbox my Nesco canner and get started!😂

It’s like you’re in my head. I had the same issues with my foodsaver and did the inverted second lid for awhile. Turned out the gasket on the inside needed to be replaced. Purchased a two pack for about $10 and now my foodsaver works perfectly. I would love the gadget you got but can’t justify it and I don’t want to add to the landfill.

Pam and Jim, I’ve sent you a message on FB but perhaps you don’t check it. FYI, your address is far from confidential, so please be careful when you tell people that you rae traveling. I am sure that you delay those videos so that you aren’t actually traveling when you say you are. Thank you for all that you do and take care. Information about us all is too easily available online these days.

I have a nesco vacuum sealer and I never had a problem sealing regular lids. I paid $115 for it new. I know a lot of people get the expensive one in Costco but from what I have heard they are not worth the money. I love my Nesco. I also saw a used one for $25 at the thrift store. So if anyone needs one, don't forget the thrift stores.

I open my jars by sliding the back of a butter knife to the top of the jar groove and twist. No marks and very easy.

If you use a new lid for vacuum sealing, could you use it later for canning? Being a beginner at this, I don't have any used lids. Thank you, love your videos!

I had seen the rechargeable vacuum sealer before but was hesitant. You convinced me! Went over thru your Amazon store and linked to it. There was also a 15% off coupon, so double win! Thank you for the educational content. I’ve just been water bath and pressure canning for less than a year (retirement is wonderful!), and your videos are my go-to info center. I’ve decided to take you up on the sale of your online courses and sign up for both come the end of June. Thank you again.
