I wondered about that, too. It seems to me that there could be some kind of software that determine from shades of gray what the actual color could have been.
Audio doesn't sound authentic plus I'm thinking that sound incorporation just wasn't technological available at the time of these original films. Personally, I find the audio in these to be annoying anyways so I'll just mute them right off the bat.
If we're to believe the implied sequence, the audio was on the black and white version too. That doesn't mean it's authentic of course (impossible if it's really from 1896) but I can see a scenario where it was added for some earlier use of the video and they've just kept it.
