Hi...just would like to share my experience. Before Baba's and other curry products was introduced in Malaysia many people use to make their own curry paste or powder by them only. Maybe some new generations are not aware of it. I prefer to use the traditional method by using the grinding stone to make the masala paste to make non vegetarian dishes like chicken, mutton and also for the fish. And to make the dry chilli powder and curry powder I just prepare all the dry ingredients by myself will gave to the mill to make it as powder. I'm sure there are still some Malaysian Indian who are like me, where they prefer to make their own preparation of chilli powder and masala powder. Thank you for taking time to read my comment.

True...your rempah(curry ingredient) should make a more tasty curry because they are freshly made not factory made( powdered form). IChang should write down the recipe in a book after you try making it from the internet/facebook. Repeat the cooking a few times...maybe modify it a bit and you have got it.

Hi Brother banana leaf is really hygiene natural food plate for Indians no need to wash with soap or hot water. “People use banana leaves for cooking and serving food because of the various health benefits they are said to have. Impressed that you guys made the mix from scratch. Those wet paste mix barehanded, quite sure Jimmy would have the afterburn. That sterilisation were so thoroughly done with soap and even boiled water. We usually rinse the leaf, dry it with paper towel and run it on a stove until the leaf becomes malleable. Kudos guys.

Hi I'm Malaysian Indian there is no sugar contain in the curry powder as well we indian's do not add sugar in spicy curry stuff it will spoil the taste of the curry. If you think the curry is too spicy you can add on yogurt or diary in to the curry to mild the spicy. Sugar is added when you do Sambal a kind of gravy paste type made in most of our Malaysian house. hope this help you guys.

The food looks delicious and the way it is like Sugu Pavitra. From Malaysia.
If you remove the seeds of the chili, it will be less spicy. Btw, thats how you can make it less spicy in future. Adding sugar changes the flavour, but its an acquired taste. Some love it, some dont.
Also if the mix is already spicy, you could grind almonds and add it to reduce the spice.

A little suggestion on sterilizing your banana leaf - I saw my late grandma doing this when I was little - wipe clean, turn on your stove, and run the leaf over fire quickly.
1) banana leaf is sterilized
2) banana leaf releases natural aroma

..sometimes..i also put little gula melaka at my curry chicken..if i dont have gula melaka..i just use sugar..and also coconut milk..i think different people has different style cook curry..and i think you not broke the rule..love your video..💜
You can try add coconut milk instead of water. The gravy will be thicker. To prepare the banana leaf you just need to wash it under tap water then toast it on a flat pan for 1 to 3 minutes and you’ll get the fragrant smell of the leaf.
I think one to three seconds enough, even one minute it'll burn worst than ichang putting the boiling water... 😱
Milk or specifically, evaporated milk would do it too if no coconut milk available.

You can put gula melaka to replace normal sugar in the curry, coconut milk and toasted dry coconut (kerisik) to make the taste more yummy.
indian curry didn't put coconut milk ehh? actually i'm quite surprised with this recipes because it using coriander & didn't using any sugar.. i guess it just different than Malay style curry's (since Malay didn't put coriander) .. but it's look delicious and quite simple, would like to try it later.. ❤️

Actually, we in Malaysia there are various types of ways to cook a curry, this is due to a combination of ways to cook Indian, Malay, Chinese, baba, Jawi(mix malay & indian), but all the same basic difference is fried or boiled. There are different types of curry spices, there are spices for meat, seafood and specialty vegetables. so you two can explore more..good luck..

hi i am a malaysian. just wanted to say that most of the indian restaurant in malaysia would not wash a banana leaf with soap. Because soap can be poisonous. They just wash it with normal water and it will be ready to be used. Pls take care .
Making your own curry powder is so extra!! Most of us only knows how to buy this powder. Even with the store bought curry powder i am not really good at making curry. And it is really good seeing jimmy help ichang to cook.
