RUclips didn't like my comment. You can safely eat pork BUT you must cook it yourself so you can make sure it's cooked to safe temperatures. And also, cross contamination is a thing so just be aware of that. Edited to add: pork and bear should be cooked to 195F and maintained at that temp for 5 minutes in my opinion.
I don't know about 195, that seems like overkill to me, but 165 degrees definitely. Gordon Ramsey, Guy Fieri and pretty much every other chef and food expert I found in my research actually recommend that most cuts of pork be cooked to 145 degrees (for optimum quality) and even as low as 135 by some people. They swear up and down that it is perfectly safe at these temps, but I still don't trust eating pork that is still pink and bloody in the center. I go to 165 degrees, which is the standard temp for well done meat.
Most chefs and food experts out there actually recommend, for quality purposes, that certain cuts of pork (such as pork tenderloin, chops, roasts) be cooked to 145 degrees and even as low as 135 degrees, according to some people. I always thought that pork needed to be cooked well done (165 degrees) and began researching this a couple months ago and, sure enough, it's been that way for quite some time. It's actually been quite a few years since it was recommended to cook pork to 165 degrees. Ground pork, however is still recommended to be cooked to at least 160 degrees, for safety purposes. I did try cooking some pork tenderloin to 145 degrees recently and it was pink and slightly bloody in the middle, as the chef recipes I followed said it would be. It weirded me out a little too much, so I put it back in the oven until it was well done. Most sources out there say as low as 135 degrees is safe for most cuts of pork, aside from ground pork, including Gordon Ramsey and Guy Fieri specifically. Even so, it still feels kind of sketch to me personally.
Modern farm raised pigs have mostly had the trichinosis and tapeworms and whatnot bred out of them is why they relaxed the recommended temperature but but I don’t care they are still an animal that shouldn’t be eaten undercooked.
