I have been mediation for over 30 years and there are a few comments I would like to add first and foremost Body language speaks volumes on the mediators skills. Notice in this opening his body is pointed away from the Gentlemen on the right making it look as if he is on the side of the other party, and continues to mainly speak to the party on the left. Hands are pointed to the parties on the left. This are small issues but as a professional mediator it is important to look and act neutral.
I've just done a mediation course and this was probably the only video I could find that reflects what I learned in the course. Would be good to see a full video to learn from.

The course cost quite a bit of money and now am feeling a bit lost as to where I should go from here. Not sure what it's like in America, but Australia seems to have very few places to gain experience.

Yes, body language conveys many messages during a mediation and a mediator needs to work to convey a message of neutrality and "omni-support" for both the parties and the process. I'm curious as to why you based your comments on a single frame of the mediation, rather than the video as a whole, given the dynamics of clip. Regardless, I appreciate you raising these valid points to keep in mind.
