The tapping sounds you are hearing is the tin roof panels expanding/flexing from temperature change, they are doing that because they were heated up in the sun, and then cooling during the night!

Excellent video! You guys should explore some of those haunted areas along the Mississippi River I have witnessed some things near Montezuma that was phenomenal but never a negative feeling. Research it sometime so much history
Omar , when I lived in Sarasota and was going to USF I swam across the Manatee river with my friends. We came out on the other side where the alligators would drag the cows down and leave all the bones and carcasses....Lots of fun but never again!!!

Next time when you go you should mount a night vision motion capture camera with a power bank for it on your kayak while you go ahead and film with your camera and flashlight so you can add the footage from the camera to the video at the end

I really enjoyed the video! You need to invest into a tactical helmet. You can mount a bright flashlight to it. A GoPro. Heck even night vision if you so please. There's all kinds of things you can mount to those helmets.
