the BEST Tomato Soup Recipe

It’s SOUP SZN 🍅🥣
Rather than going for the soup and grilled cheese vibes, I decided to blend it all together…literally blending a block of cheese into the soup, and crusting my garlicky sourdough croutons with parmigiano reggiano 🧀
Ingredients:
8-10 ripe tomatoes, halved
3 large carrots, peeled and chopped
1 fennel bulb, sliced
3 celery stalks, chopped
1 large onion, diced
6 cloves of garlic, minced
2 shallots, chopped
8 tablespoons olive oil
4 tablespoon tomato paste
1 TB dried thyme
1 TB dried rosemary
1tsp Calabrian Chile paste
1 cup sparkling wine
4 cups vegetable or chicky broth
1/2 cup fresh basil
1 wheel Boursin cheese, crumbled
