My favorite barley recipes:
Vegetable Barley Soup
1 onion, diced
1/4 head of celery (½ a package of Trader Joe's celery, ~ 1 2/3 c) including leaves, chopped
EVOO
6 cups water
2 Knorr vegetable bouillon cubes
5/8 cup barley
1 small bay leaf
1 medium gold potato with skin, chopped
1 carrot, chopped into quarters
1 14.5 oz. can diced tomatoes
1 cup greens (collards, kale, spinach), chopped
1 teaspoon dried basil
Salt and pepper to taste
Put EVOO and onion in a flat-bottomed wok and cook until begins to brown, then add celery and cook until well browned.
Add tomatoes and basil and cook a while.
Add the water and remaining ingredients, except barley and spinach and bring to a boil.
Rinse the barley, then add it to the soup.
Bring to a boil then reduce to a simmer, stirring regularly.
Cook covered until barley and vegetables are done, about 30 min. for Goya pearled barley.
With about 10 min. to go, add greens and cover and cook 10 min.
Taste and correct the seasoning.
Barley Pilaf
1 lb. (10 oz.) fresh mushrooms (preferably Portobello), sliced
1 medium onion, sliced thinly
Extra virgin olive oil
1¾ cups (1 cup) pearl barley
4 cups (2½ cups) vegetable broth
Salt and pepper to taste
In a skillet, sauté onions in oil until translucent and remove to a 2 quart casserole dish.
Sauté mushrooms in oil and remove to the casserole dish.
Preheat oven to 350oF.
Add more oil to the skillet and sauté barley for about 10 minutes, until light brown.
Add barley to the casserole dish.
Add salt and pepper.
Pour broth over mixture.
Bake in oven, covered for 30 minutes, then for an additional 30 minutes uncovered.

Barley can be an excellent side dish, just saute some cooked barley with veggies. You can replace rice with barley in risotto recipes or pasta in pasta salads.

The chili and ravioli dish. A new one for me. I always make homemade chili (in the crock pot!) but I have a can of chili in my pantry and ravioli in my freezer. I may try this one.

That French onion stroganoff casserole looks great, but you know what would make it better? Mushrooms! Mindy would never, I know. 😆 But I love throwing mushrooms in stroganoff type dishes.

I love using the roasted vegetable ritz for casseroles that call for ritz crackers. I feel they just take it up a notch in taste. Of course, some people may not like roasted vegetable ritz crackers.. Love these recipe ideas.

Hi Mindy! Make sure to use a silicon whisk in your Le Creuset. The metal can scratch the bottom. And I had no idea there was a casserole crockpot.
I make my chicken and rice in my Le Creuset braiser. Then cook it on the stove top. Great for when the weather is on the warmer side so I don't have to use the oven.
I miss OKC. Specifically Leo's BBQ and the one near NW 50th Street. I found out about Okrahoma popcorn there. I was also baptized with love.

Great idea with the barley. I have an Americas Test Kitchen beef barley soup recipe that is one of my favorites. That's the only thing I've ever had barley on hand for. Now I have another dish to use it in.

My favorite Chili recipe:
3-Bean Chili
1 onion, chopped
1 green or red bell pepper
2 cloves garlic
½ cup dry red wine
1 14.5 oz. can diced tomatoes
1 15 oz. can each black beans, dark red kidney beans, and great northern or pinto beans, drained and rinsed
4 teaspoons chili powder
1 teaspoon each cumin, oregano, and basil
½ teaspoon ground black pepper
2 teaspoons molasses
green or red onions, chopped
In a skillet with a little oil, sauté onion until golden, then add bell pepper and cook until caramelized.
Add garlic and cook a little.
Add spices and cook 1 min.
Add tomatoes and cook 15 min. or more.
Add remaining ingredients except green/red onions.
Bring to a boil, reduce heat and simmer 30 minutes or longer, stirring occasionally.
Serve with rice, topping with green/red onions, and optionally avocado and cilantro leaves.
I made the French onion casserole today. I used Gouda instead of Gruyère and it was very good. My husband enjoyed it, too. I also bought the ingredients for the ravioli and chili dish to have on hand for a quick dinner some night. Thanks for the video….I really enjoy your channel❤

I wonder if a casserole would work out in an air fryer toaster oven? I just obtained one and am searching for reasons to use it! I've binge watched so I'm not sure if this is the one where you talk about the garlic smell on your hands but stainless steel gets onion, fish, and garlic odors off! I just run my hands over the flat part of a santoku knife or any stainless spoon, etc. under running water. You can buy a stainless steel "soap" bar just for that!

Here in MA, barley is sold in bags with the dry beans. Never seen it in a box.

I just made the beef barely from Grammy. I saw her recipe card had mushrooms on it so I added a can I had. It’s def giving beef barely soup without the broth.

This might sound weird but my kids love it when I have leftover chilli in the morning I'll make scrambled eggs mixe the chilli beans with the eggs and sometimes nacho cheese and put it in a burrito it looks gross but taste amazing

Thanks! There are 2 I definitely want to try, in fact I am going to cook the chili/rotel/ravioli bake in a few minutes. Also, the beef and barley will be done in the next couple of days as I have all the ingredients and it sounds yummy. I really appreciate that these weren’t all chicken! I don’t like chicken very much so often most YT recipes I won’t make because the vast majority are chicken.

Yes, I plan on making the chili with ravioli and the barley with beef. I however need to make it as low sodium as possible for my husband so this will be fun to experiment and see what happens. I can meat so I more than likely will not use ground beef. (I'm vegetarian so I don't care what meat he wants as long as I don't have to eat it, haha)

Mindy, I used you for an analogy for chemical bonding this week. Lol! I told the kids covalent bonding is like having friends over for a bbq and you bring some stuff and we’ll make some stuff and we’ll all eat together. But ionic bonding is like my friend who is a RUclipsr and it pays her to make a whole extra meal that her family won’t even be able to eat so she walks it over to the neighbors or drives it over to a friend’s house and gives it away. The students were like, “Is that actually true?” I mean I technically use the term “friend” loosely, but it still sort of fits. Lol!
