if you make an enderman, they produce pearls which means that their entire body is coated in the same stuff as the pearls just black because of oxidization, they are essentially giant teleporting clams with legs. the ender mite is a reference to how the pearl is made as clams make pearls as a defense against parasites.

it likely kepts messing up (when it was going all white) due to the 6 glow elements you added for the wither eyes, it was trying to apply the glow effect and radius to all the eyes at once lol (something to that effect anyways would be my best guess)
