Christmas Breakfast Casserole (Sausage eggs and cheese casserole with hash browns!)

- Christmas Breakfast Casserole. This breakfast casserole has everything. Hash browns, eggs, cheese and sausage. Some people call it a has brown casserole, and others loaded brekfast casserole. It's easy to trick it out even more by adding peppers onions and other things. Here's the Recipe:
10 eggs
2 cups milk
1 bag of your favorite has brown potatoes
2 cups mild cheddar cheese
1 cup mixed Colby Jack cheese
1 pound breakfast sausage (drained)
Directions:

Preheat oven to 350*F
Brown the hash browns enough to cover the bottom of your greased 8-1/2" x 11" baking dish.
Brown and drain your sausage. Crumbling up as you go.
Add a layer of sausage saving some for the top.
Add a layer of cheese with the 2 cups shredded cheddar
Beat 10 eggs and milk with salt & Pepper to taste gently pour over everything evenly.
Add the remaining sausage and top with shredded Colby Jack cheese
Bake at 350* for approximately one hour making sure the middle is cooked through. HINT: if you jiggle it and looks liquid in the middle...IT IS! Cook it longer. You can also test with a butter knife or toothpick for doneness.
If making the night before, cover with plastic wrap and refrigerate. Make sure to give it at least 30-45 minutes on the counter to come up to room temperature before baking.

Made me want some now and I’ve not eaten breakfast. Our recipe does not include taters but has loaf bread as bottom layer. Other than that it is pretty much the same. You can substitute crumbled bacon for the sausage or add with the sausage. Merry Christmas from central NC.
