      I guessed and eyeballed it based on the video. I also used thyme powder and green onion powder instead of the fresh...just a little. Still came out good. Try it and experiment.
      I used to be stuck on measurements, and still kinda prefer it, until I started getting cooking instructions from my mom, who measures nothing but has the most flavorful food. So I started freestyling on my own and now I can season well either way.

    Cooked for the 1st time. Pleasant voice to listen to and directions were easy to follow. Skipped the pepper because I don't like spicy, and added sub for the pimento seeds because I couldn't find any by me. Cheers! 🍻

    I’m going to start using that browning instead of burning sugar. As a Trini 🇹🇹, we burn our sugar but health wise I prefer to cut the sugar out completely.

    Love and appreciate your recipe, no ketchup, cornstarch and just a pitch of sugar. Everybody used on RUclips using nasty ingredients like ketchup and lots of sugar and cornstarch, you kept it authentic Jamaican upscale cuisine.

      Yea bc when u cover chicken with the lid the natural juices flow out plus it’s a little wet due to cleaning it before seasoning&cooking

    Hello Whitney,
    I tried your recipe for brown stew chicken. It went really well and everyone in the house enjoyed it. For some reason it didn't make a lot of gravy. Also, what part of the chicken did you use?

      If u leave to season overnight it will produce less water as it dries out but as she clearly washed and seasoned to cook right away for the video it would be holding more water therefore produced alot. Just add if u need and turn the heat down and simmer once chicken has browned to thicken slightly
