Here is my guess:
Each monster in the game has an ID.
Erasing a monster prevents any copy with the same ID from spawning in that run.
This even applies when you try to spawn an erased enemy with the debug console.
I tried to erase the first form of Hush, then spawn the second form with debug console, and that works.
It actually makes sense because they have different IDs.
However, it seems like during the fight with some bosses like Hush, the second form only spawns when the first one is killed, but not erased.
In case of the fight with Dogma (+Dogma's TV and Dogma Angel), Isaac can only deal damage and erase Dogma's TV.
Dogma can still trigger the second fight with Dogma Angel as shown in the video.
The three have their own IDs as well.

A thing worth noting is that if Delirium turns into a segmented boss like Larry Jr or The Hollow, and you use the eraser to kill one of the segments, you can end the fight early that way since I guess it counts that segment as "Delirium" and when it dies, then its like "Welp, Delirium's dead. Get out of here"

Delirium uses different ID from bosses, but segments spawned with bosses share the original ID of that boss. If you erase segmentless boss, it would be ignored because of Delirium'S ID. That is why you can erase Larry (Jr) to destroy Delirium

Super specific question that probably only can happen in a Tainted Cain run: If you erase one of the final bosses, use the R item, do the same path again, and at any point in the run use the clicker to change into another character that doesn't have that particular boss unlock, does it count as you killed it? Because the eraser will prevent it to spawn, but maybe the game understands it as a kill

Mega Satan's left hand, right hand and the head are three different enemies (with different IDs)
If you get rid of two and erase the last, you can skip the second phase.
The fight continues if only one hand is erased.

Dogma boss fight is essentially a fight for an item "Dogma" (ruclips.net/video/YxzF9HyfX6A/видео.html) so Isaac can fly and fight the Beast.
No Dogma = no flight.
No wings = no repentance.
No repentance = Erasing Dogma is bad.

i actually had a weird bug lately where I successfully erased War in around basement 2, with the pink poof cloud and everything
then later in boss rush, he actually appeared again, but took random high damage after a couple seconds (the first instance of damage getting him off the horse, the second instance of damage killed him entirely, and left behind a pink poof)
so weird, maybe boss rush has scripted waves that ignore erased enemies

I doubt it would skip the others or the Beast, but it may soft-lock the game similar to Dogma(Angel). Same thing for erasing the last boss from a wave in Boss Rush.
