Italians used leather straps to hold plackart together for centuries, no problems. Fighting an armoured opponent with a sword would use half swording technique or grapples and wrestling technique with rondel dagger. Slashing at straps was not a good move since the other techniques killed much faster.

That's how it was done, armour needs constant maintenance it could get damage after each use.

It offered some more mobility than riveting them together, and the armor will still work if the strap gets cut.
