Man I really appreciate the level of detail in your explanation. If there’s anybody I trust to listen to about sharpening, it’s you. There’s certainly lots and lots of videos showing masters at sharpening but they suck at teaching and helping people actually understand the process and be able to recreate their methods. You’re an absolute treasure.

Sharpen side B until scratch pattern goes completely down the bevel and burr has formed in side A. 3. De-burr side A using a single reverse pass. 4. De-burr side B using a single reverse pass. 5. Repeat 3 and 4 until there is no burr. Did I get that right? I don’t need to do major reprofiling, so I just grabbed a 600 grit diamond stone from your Amazon store. Love the work you do bro!
Hey Jerad, excellent job on the video ! My skills on sharpening over the last 2 years skyrocketed thanks to you teaching the fundamentals, granted I use a K03 to sharpen , but I feel if I had to sharpen freehand I can do it with little to no problem, the fundamentals are there! Bang ‼️

A jeweler's loupe helps a lot to look at your blade edge to see if you're grinding your edge all the way from heel to tip and to see your burr (although you should be able to feel it).
This very helpful. I did a 12-month culinary course, but they spent very little time on knife-sharpening so it never quite clicked for me. They did make us all buy a steel to hone the knives with, which I'm told is supposed to remove small burrs. Is it interchangeable with a strop?

We use linoleum knives for cutting excess fiberglass resin of bathtubs and if the catalyst dried it too fast then your gonna havehatd time sharpening..we do it on a machine...could you do a video like that
Overall- clean instruction… to get a burr, pressure is applied when moving material from bevel to apex… correct? It appears your pressure is Apex to bevel.. clarify please, I find that this is the main difference throughout all sharpening videos - what direction to apply light pressure .
I only sharpen blades against the edge with frequent flipping to opposite sides. It certainly takes longer, but There is never a burr that way. I've learned how to sharpen cutting edges for lathe cutting tools.

if im going in both directions i put light pressure on both, you want to let the diamonds or stone do the cutting you have to apply a little pressure but you dont want it to effect your ability to maintain angle which is most important

I watched a sharpening video recently on a kitchen knife where the guy held the knife at a 45 degree angle ( not the cutting bevel , but in relation to the stone front to back) on one side than 90 degrees on the other to create a scratch difference scratch pattern on each side. He said this improves cutting. Do you agree? Have you tried it?
Amazing video. So the stropping is just for deburring? Or just after a full sharpening you strop just to debur and then you can strop just to maintain going forward?
Yes, you Strop to remove any remaining burr from your de burring process, you also Strop to maintain your edge between Sharpenings, you can also hone your edge, if stropping doesn't work then hone if that doesn't work then it needs another full Sharpening

Hi, I'm a beginner in this field (but I'm eager to learn) I just bought an Victorinox 8 inch chef knife, and I wanna buy a combined wet stone but I don't know what is the best combination 1000/3000 or 1000/6000, anyway it will be a Cerax or a King.
You need to start with a low grit for your first stone 300 or under, then you can have something around 600 to 1000 then you can progress higher if wanted to 3k then 6k etc.. but the first 2 stones are most important
Both, unless your doing burr fatigue or removal or burr flipping in that case no pressure, but when Sharpening you can add pressure in both directions just make sure your pressure is not compromising your ability to hold the angle
Hey Jerad! Thanks for the video, I have been trying to sharpen my old hunting knife for a while now and haven’t been successful till now. It had all kinds of chips in the blade and had to be completely re-profiled, I was able to get it hair splitting sharp with the help of your video! Quick question, do you use oil on the Worksharp benchstone? It says no water or oil needed on it but wasn’t sure.
thats awesome and im glad the videos help, and no i use them dry i prefer to use diamond plates dry , but you can use water or soapy water which can make them last longer

Go into my neevesknives store in the description, I have my recommendations for on a budget, but basically any diamond plates will work great and many you cab find very cheaply
What if the angle you pick is different from the original angle? Seems to me like you want to hit the exact angle that the knife came with unless you are willing to reprofile?
You are going to reprofile most likely anyway, even if you are close if will still be different, especially if it's a factory edge in that case I for sure want to put my own angle on it, but even when you try to match it you still could be off slightly and have to work until it's set
@@NeevesKnives It’s just a great thing to have honestly does take some getting used to but once you get the hang of it you can put a pretty good edge on anything even super steels no problem
I think a sharpe is good if it helps you, I tend to try and look at the scratch pattern but it's the same thing the marker just makes it easier to see. And yes there's always a bit of a learning curve but with a little practice it's like riding a bike
You only need to do a burr removal after your finishing stone, in order to reveal a clean apex. The burr should develop on each side with each stone, at the end when your on your last stone and last burr that is when you want to fatigue it and get it to pop off, once most of it is gone then hit Strop to get remainder, you can take your nail and run it directly up the edge like your trying to cut the the front of your nail it should feel like smooth glass if the burr is perfectly removed if not you will feel where it's still at
@@NeevesKnives thanks. I keep over thinking this. Basically you sharpen one side till you get a burr, then switch to the other side and get a burr. Then go to the progressive stones until the last one and then remove the final burr?
How do you guesstimate the coarseness of stone you want to grind then hone your blades on? You said 600, is that just a universal coarseness? Ive been using 400 then 1000. Getting sharp, but not how i want it.
Hey Jerad, great video as usual, brother! You seem to like the Work Sharp bench stone. How about the Guided Sharpening System, the one that’s similar that has the upgrade kit. I remember you gave one away, what were your thoughts on that, or which, would you prefer of the two?
Are you talking about the work sharp precision, I actually still have one, and have multiple videos I think it's great especially if you get the aftermarket attachments that take it to the next level
@@NeevesKnives no I meant the one that’s like the bench stone. It’s the same pivot design but it comes with a ceramic rod attachment and you can get the upgrade kit for it.
Heyyo Jerad, not sure if you’ve already answered a question like this, but in looking into guided sharpeners and have never bought one before. I was torn between the worksharp and KME. But decided the KME would be best because of the limited stone capability of worksharp. I recently saw the videos you have on Worksharp attachment/upgrade components which solves previous concerns, so my question is, for around the same price (WS+upgrades+Stones, vs KME system with diamond stones included) which system would you prefer?
Go with the KME, you won't need to upgrade anything but the stones at some point, make sure you get the one with the base and diamond stones, in the future you can pick up some venev stones

You just have to keep practicing so you will start being able to identify exactly what your doing

i think fresh blades can start closer to 20deg and then gradually go to 17 as the the edge wears down with time. that way it naturally saves you time

Problem is, most if us don't want to take the time to do that. Is there a quicker way for sharpening steak knives. Like multiple knives?

Say J have you tried removing otf blades to use a roller sharpener? What's your expert opinion
no but i wouldnt rec it because they have narrow blades and the rollers dont seem to do well with narrow blades

Diamond plates are used dry, resin bonded diamonds are used with soapy water mix

When you say 600 grit, would that be JIS, or FEPA?
Jared, thank you. What do you do if you are like me and you’re on a tight budget. I would rather go all in, but what can I start with? P.s. - total beginner.
Go into my neevesknives store in the description, I have my recommendations for on a budget, but basically any diamond plates will work great and many you cab find very cheaply

Does the height of the blade matter when it comes to the angle?
Do you use oil or water with a diamond block?
What if the angle you pick is different from the original angle? Seems to me like you want to hit the exact angle that the knife came with unless you are willing to reprofile?
You are going to reprofile most likely anyway, even if you are close if will still be different, especially if it's a factory edge in that case I for sure want to put my own angle on it, but even when you try to match it you still could be off slightly and have to work until it's set
I’d always recommended the work sharp field sharpener has everything a beginner needs

@@NeevesKnives It’s just a great thing to have honestly does take some getting used to but once you get the hang of it you can put a pretty good edge on anything even super steels no problem

I think a sharpe is good if it helps you, I tend to try and look at the scratch pattern but it's the same thing the marker just makes it easier to see. And yes there's always a bit of a learning curve but with a little practice it's like riding a bike
How do you know if the burr has been removed? Do you need to remove the burr after the coarse stone too?
You only need to do a burr removal after your finishing stone, in order to reveal a clean apex. The burr should develop on each side with each stone, at the end when your on your last stone and last burr that is when you want to fatigue it and get it to pop off, once most of it is gone then hit Strop to get remainder, you can take your nail and run it directly up the edge like your trying to cut the the front of your nail it should feel like smooth glass if the burr is perfectly removed if not you will feel where it's still at
@@NeevesKnives thanks. I keep over thinking this. Basically you sharpen one side till you get a burr, then switch to the other side and get a burr. Then go to the progressive stones until the last one and then remove the final burr?
How do you guesstimate the coarseness of stone you want to grind then hone your blades on? You said 600, is that just a universal coarseness? Ive been using 400 then 1000. Getting sharp, but not how i want it.
Is it feasible to sharpen like this with only one hand ? I'm a stroke survivor / left hand only.
Hey Jerad, great video as usual, brother! You seem to like the Work Sharp bench stone. How about the Guided Sharpening System, the one that’s similar that has the upgrade kit. I remember you gave one away, what were your thoughts on that, or which, would you prefer of the two?
Are you talking about the work sharp precision, I actually still have one, and have multiple videos I think it's great especially if you get the aftermarket attachments that take it to the next level
@@NeevesKnives no I meant the one that’s like the bench stone. It’s the same pivot design but it comes with a ceramic rod attachment and you can get the upgrade kit for it.
Heyyo Jerad, not sure if you’ve already answered a question like this, but in looking into guided sharpeners and have never bought one before. I was torn between the worksharp and KME. But decided the KME would be best because of the limited stone capability of worksharp. I recently saw the videos you have on Worksharp attachment/upgrade components which solves previous concerns, so my question is, for around the same price (WS+upgrades+Stones, vs KME system with diamond stones included) which system would you prefer?
Go with the KME, you won't need to upgrade anything but the stones at some point, make sure you get the one with the base and diamond stones, in the future you can pick up some venev stones

When it comes to sharpening, I mess up the most on raising my elbow and not bending my wrist. I really do try to keep my wrist locked
THE POINT IN LOCKING YOUR WRIST IS TO NOT CHANGE ANGLE IF YOU CAN HOLD THE ANGLE WELL THEN A LITTLE WRIST FLEX IS OK AT TIMES AND WILL HELP

is it actually matter how much degree angles? lets say between 15 and 20 as long as i sharpened consistency

600 grit for finish? Did you mean 6000? Or did you really go MORE coarse?
He started with a 320 grit, finished with 600 then strop compound. If you can't get an edge like that off a 600, more practice!
