You should definitely be waterproof sealing those new drilled out holes with a marine grade sealant. Just dab a generous amount before tightening the screws. Holes on a boat are not good.
They do have a convex shape so they show a very large area behind the ski, I'm over 6 foot tall and could see behind myself very well, my wife is about a foot shorter than me and could also see great.
They offer decent visibility, and also fulfill the coast guard requirement of being able to see behind so you can tow without a spotter sitting backward on the ski. I'm not 100% sure what you mean about mounting them down low, do you mean tucking them down somewhere even lower than where the intended mounting location is or just that the spot looks low?
There are options to add reverse (if yours doesn't already have it), mirrors, storage compartment in the front, boarding step, I've seen audio systems, and of course plenty of performance things, do you know if yours is the 60 or 90hp?

I'm quite tall (think middle of 6ft range) so my legs tend to get in the way of a lot of mirrors on skis. These have a slight convex shape to them that made them very effective despite them tucking into the body lines of the spark so well.
Surprisingly they did seem to do very well for visibility. I didn't really think to check, but the mirror might have a little convex shape to it to allow a wider area to be seen, I can't say that for certain though, and it probably helps that I'm not a very big fella so I could see past my legs easily and it didn't feel like I was having to dramatically change where I was looking, just a quick glance down and you could see quite clearly behind the ski.
