So will putting the lightly browned meat aside with the frozen peas added directly to the meat (without cooking them). Steam the halved potatoes in the meat pan with the juices and oil. THEN mix the meat and peas back in with the potatoes before spooning into the crust. These extra steps will ensure you keep the tasty juices in the food. You are a BRAVE and Wonderful Pie Maker 😋 -V

I’ve always thought of those pans as being cheese cake or quiche pans. My mind has now expanded! I loved that you showed how to mince the meat, but you edited out the tedious parts! Boning the lamb was beautifully done and I’m so glad you showed making the broth. If you’d boned it before hand you could have used the broth to increase flavor and moisten the meat and veg mixture. I used to eat Samosa (fried hand pies) with ground meat in East Africa as an American child back in the 60’s and my brother and I still long for them. They used to be spicy and I realize the spice I crave in a samosa is not to everyone’s taste here in the States. You have inspired me once again! Thank you for doing September Pies for us!

I bought that same lard at Kroger - Just in case anyone is wondering! This pie looks delicious - I'm not a big lamb meat person - so I'd substitute it but I'm sure it would be delicious!
This looks delish! I want to try it. First time I did a water crust pastry I think I danced a little jig around the kitchen. It was a thing of beauty (and delicious) and my own two hands had made it. SOOOO satisfying. Now, my recommendation is that you must,must make a Tarte Tatin. its Amazing. Cooking light has the fool-proof recipe that i have been using for at least 12 years now. But it is helpful to have a cast iron skillet.
My girls (9&11) are so excited for September pies. In the first season we tried the gingerbread cream and it was a hit!! They have been anxiously awaiting a season two and ask every day if the new one is out!
In England I have only experienced samosas as being made with filo pastry, and the filling stays moist. Also our pies made with hot water crust tend to have copious amounts of fatty meat and or aspic. You could however use the broth and cornstarch and make a slurry type gravey added to the filling of a hot water crust to keep the insides moist.
This was really interesting. Such a shame the filling was a little dry. I would like to try it, I'd have to add my favourites garam masala, fresh garlic and fresh chillies. I would also peel the potatoes and dice them.

I love Indian food and that looks so delicious. Maybe coconut milk in lieu of cream would be good to make it more moist and keeping with Indian style food. A raita salad would go great with that and maybe some mango chutney?
I make Scottish Lorne sausage and put it in a hot water pastry crust for Scottish meat pies---SO GOOD! I'm going to try the samosa, that looked delicious, I'll use beef, though, my kids (unfortunately) don't care for lamb. BEAUTIFUL PIE!!

I’d like to suggest you try bumbleberry pie. We live in southern Utah. It’s a specialty in the little town outside of Zion National Park. I looked up the recipe and it seems to originate as Amish Bumbleberry pie. Who knows? But it’s delicious!

We have a dish called kheema...it can be chicken or lamb..your filling almost matched that. However, as an indian i would have a made a lamb kheema and then made the fillings.😃 Anyways, it was delight to watch you make Meghan a savory pie.🤘🤘 All the best❤
I love what the tumeric did to the color of the dough. I think what someone could do is add butter and flour to the meat mixture, add broth to make a sauce. That might help make it more moist. Thank you for sharing!

I was surprised when you added the cornstarch, because it looked dry enough already, and then a little more surprised when there was no more liquid added. But you never know until you try! I'm a vegan, so I would try lentils instead of the lamb in this pie. I do love a samosa! I bet the house smelled great.

Maybe make a gravy to give it some moisture. The slurry will help keep it together. Also, if you need to make your own minced meat, use your food processor with the s-blade. Pulse till you have the desired texture of the meat.

Fancy grocery stores might carry lard in the ethnic isle with Mexican food items. It will be called Manteca and it is just lard. It doesn't have any meat flavor. Whenever a recipe calls for shortening that's what I use because it's cheaper and healthier than vegetable oil shortening.
Megan, great job! We are currently eating more of a keto diet, so avoiding wheat flour. Would you consider trying a sweet or savory (or both) pie that uses an almond flour crust or something like it? And also a stevia-type sweetener? Love your videos!!

That looks delicious! Paul Hollywood has a beautiful book of pies. One that my husbands aunt made is corned beef pie. I reckon it'd be good with that hot water crust . I normally wouldn't eat corned beef (just out of a tin) but this is delicious. 😋
Personally after making these myself, a lot, you needed to add a touch of stock, to the lamb mix, eg only 100-150ml of veg, beef or lamb stock and I wouldn’t have added cornstarch at all because the potatoes would have enough starch in them to thicken the filling in itself. Also a hint from a 62 year old British woman, instead of melting your lard, just rub it into the flour, like you do with butter until you have your crumbed flour mix, then you need to just add salt, pepper and boiling water. My nanna taught me, she used to cook in the old soup kitchens feeding the poor and homeless, even during the war she worked, whilst a lot of her children were evacuated, plus being a single mum with 10 children at home to look after on her own things were very tight financially and lard was the cheapest alternative to butter. The pastry becomes less soft and easier to handle and roll out, if you don’t add melted lard. It doesn’t harm the pastry if it cools a bit, it’s going to do its thing in the oven. I hoped that helped. Plus as a hint, if you can’t get lard, crisco can be used as an alternative to lard.

So… a few weeks ago, I was watching re-runs of the Great British Baking Show and one of their technical challenges was a hot water crust and the judge, Paul Hollywood says, people don’t know how to make these.I thought Megan Knorpp does! They used a dolly wooden pie mold to shape the crust. I thought that would appeal to you. I think if you Google “Paul’s hand raised pies” you would get thei particular recipe. I was more fascinated by the dolly.

Hi Megan, missed tomatoes in the filling. May be you could have used tomato paste, pulp or puree for authentic Lamb samosa taste and opted out of corn starch...lamb filling would have been moist. And the crust seems to be having more lard than it needed and hence it was slightly dry may be. Never thought of this form of samosa. Thanks Dear for giving an idea.

I'm in Scotland and have only had somosa in filo pastry like you in a little triangle but this looked amazing 😊 I love lamb 😊 and thanks for the tip with the parchment paper I tried to make flat bread the other day using yogurt and it didn't matter how much flour I used it just kept sticky to my rolling pin😮 so next time I'm going to do the two sheets of paper and roll them that way 😂😅

You need a sauce to drizzle over samosa. Usually a Yogurt mint sauce that pairs perfectly with lamb. Looks super good though 😊 I could almost smell it.

Usually with a raised pie like that, after cooking, you poor the gravy into the air hole. You could have spiced the bone gravy and used that. Yummy.

So… a few weeks ago, I was watching re-runs of the Great British Baking Show and one of their technical challenges was a hot water crust and the judge, Paul Hollywood says, people don’t know how to make these.I thought Megan Knorpp does! They used a dolly wooden pie mold to shape the crust. I thought that would appeal to you. I think if you Google “Paul’s hand raised pies” you would get thei particular recipe. I was more fascinated by the dolly.
I would love to get a pie mold like they use over there! And thanks for the confidence in me!

Looks pretty glad it was good ,,,, you said no to pumpkin but it was such a delicious pie my Mother made but I have to say If I remember right she said she didn’t use pumpkin spice, if I remember right she said she used allspice and nutmeg. Would you please try. 😊

I looked it up-my Walmart does have lard. That looks yummy! I would love for you to try to make Oreo Dirt Pie! It is TDF! I’ve been looking up recipes and I think they are all no bake. Each recipe is pretty similar and very easy. I love to see all the different pies you make! I hope you try my suggestion Megan!!!

Hi Megan, missed tomatoes in the filling. May be you could have used tomato paste, pulp or puree for authentic Lamb samosa taste and opted out of corn starch...lamb filling would have been moist. And the crust seems to be having more lard than it needed and hence it was slightly dry may be. Never thought of this form of samosa. Thanks Dear for giving an idea.

I'm in Scotland and have only had somosa in filo pastry like you in a little triangle but this looked amazing 😊 I love lamb 😊 and thanks for the tip with the parchment paper I tried to make flat bread the other day using yogurt and it didn't matter how much flour I used it just kept sticky to my rolling pin😮 so next time I'm going to do the two sheets of paper and roll them that way 😂😅
i was thinking that at the beginning you've said to have eaten the samosas with a yoghurt sauce? maybe this should be also have one? like the ice cream for the sweet ones?

You need a sauce to drizzle over samosa. Usually a Yogurt mint sauce that pairs perfectly with lamb.
