I really recommend you get some genuine Weber tongs. Grippy and perfectly tensioned. Those slippery silicone tongs are of the devil!! Btw, great recipe demo.

In the last 45-60 minutes is when we put the veggies in the pan . Also every now and then keep on adding some medium for the fire to keep it going .
You are going to slow roast it nice and steady at between 3-4 hours then it will come out perfect. We love cooking for such a long time because it makes for a very nice social meet .
