      I usually pull the steak at around 132-135 and let it rest. While its resting the temp will rise a bit.

    What temp did you pull off griddle side. Does it hurt the bottom

      You can use this method shown in the video or you can use an elevated cooking rack or even an aluminum pan with holes to raise it off the grate panel. We have seen it all. I usually pull my steaks at 135, but that can change from time to time.

      I’m going to order the smaller portable one thats 250. I saw you at the world championship. In Texas when it 100 out side are you pulling at 135? Does it carry over to far? For sca. And on the small one how much charcoal to sail at 600
