It looks like Paolo comes from a very rule based family, and to be honest he doesn't love taking over a restaurant. Sincerely he'd never look at himself work in a restaurant because there's no fun, all days are similar as if it might be a compelled and uninspired continuation of life. Anyway I love the way he argues about his family and his initial roots. Nothing bad in this interview, apart his difficult accent!
