How do you compare this to the regular cajun rub/ Louisiana rub?
Been a while since I’ve had it so it’s hard to compare. This was really good though.

You’re eating the flats wrong. Try this the next time. Hold the flat vertically with your left hand on your plate and use your thumb, index finger and middle finger to grab the top and push down as if the skin was a sock on the wing. You want to grasp firmly to push the meat too to break it away from the bones. Next, flip the wing over and do the same thing from the other end. The skin and the meat can then be pulled clear of the bone with almost no waste and you won’t be gnawing on chicken bones. This took a while to describe, but it takes four seconds to do. There’s definitely an order of operations because the meat comes off cleaner in one direction. If I recall correctly, the last pull where the edible part is completely removed needs to be in the direction towards where the wing tip was before it was cut off. If you can’t identify this end, search for a video on how to cut up fresh wings. It’s super simple and highly effective.
