MEMORIES OF MACEDONIA ~ PEČENI KOFTINJA i KOMPIRI MANDZA (Meat Kofte and Potato Casserole)

- Koftinja, or Kofte, are very popular in Macedonia. They appear in many recipes from being grilled to soups. In this version, they are baked in the oven with potatoes and veggies in a simple sauce. The outcome is a flavour extravaganza with everything you need in one dish. Don't forget to bring lots of crusty bread to the table to mop up all that wonderful juice! YOU NEED:
1 kg minced beef and pork
1 Tbsp. paprika
1 Tsp. hot chili flakes
1 Tbsp. Vegeta, or Dafinka, or a vegetable cube, crushed
Salt and Pepper to taste
1 handful Parsley, finely minced
1/2 onion, grated
5-6 cloves garlic, grated
3 medium sized potatoes, sliced in 1/2" rounds
2 large tomatoes, sliced in 1/2" rounds
salt and pepper to season potatoes and tomatoes, to taste
4 peppers, hot or mild
SAUCE:
1 Tbsp. vegetable oil
garlic tips from grated garlic
4 Tbsps. tomato paste
1 Tsp. paprika
3 cups water, or more if needed
salt to taste
parsley, finely minced for garnish
My mother in law just passed away a week ago and I am looking forward to making this dish to give comfort to my husband and his brother. I am as Canadian as it gets but I love being married into the Macedonian culture. I hope to make my Mother in law proud! Bog Da Prosti Ma!

💖💖💖 Thank you for the video. What a beautiful casserole that recipe makes. I will try it.
I bought a side of pork and a lamb from a local farmer; she sends the animals to a regional butcher (USDA regulations are confusing). Somehow my instructions got garbled, and the minced meat portions came back super fatty. I can barely eat them there are so rich. However, I will try them in this recipe since it seems like the potatoes will absorb some of the fat, and the tomatoes might cut some of the richness. It's worth a try - if it doesn't work this time, I'll try again with better ingredients.
I hope you and yours are staying healthy in these crazy, crazy times.
P.S. I was thinking your were going to say the Koftinja could be substituted with slices of eggplant. I may try that, and the portobello mushrooms, too! It's _so_ pretty!
Thanks Kirsten! I am sure the lamb would be perfect in this, as originally it would have been pork and lamb or beef and lamb. Yes, you can sub the potatoes for eggplant, or even add them in.
